The Butcher: Dave Cuts Steaks on the Bandsaw - Exclusive - History MJ: Good video, i needed to see how to cut bone. However, this is a power tool, no different from construction. You need to be wearing goggles, and taking off your ring and watch, which can catch on things. Bone fragments can fly into your eye. Not safe.
You are very skilled - a joy watching you trim that meat! Please make dog scrap packages from trim. I buy a lot for my dogs - and need both fat and meat and pieces of bone. Cooked bone becomes bone broth (cannot feed cooked bones to dog, only the broth part, raw bones are for dog chewing. You can sell a lot to dog owners with dog food recipes attached. The dogs will appreciate it and get better nutrition than this awful kibble junk.
Never a good idea to add music. Drowned out the voice and irritated my ears.

This guy is a butcher? Watching this is literally making me scream at my screen. Guy produced a door stopper for a steak and chined way too much bone. Super wasteful. And cut fat side up on the saw. Why is this guy telling us how to cut meat. You-d be made fun of and fired day one at any butcher shop.

Before the bandsaw they used cleavers and a massive knife called a poacher saw just to get the meat off. The poacher saw takes skill if you don't use it right you will destroy your primes and the meat will be rejected by the inspector thats why you have to get it right.

The contestants on this show are partly clueless, its embarrassing to watch. The bald guy with most experience uses a wood saw? The woman destroyed the pig from the start. does this show get better more experienced professionals to compete or what?

Nothing goes to waste except those wedge cuts that would be rejected by yourself on the show that you judge on and all the other waste you created in that short loin that is still sitting on the saw in the background

Um what? Why bother with knifing if you're just going to use the bandsaw anyway? If you're going to knife it, finish it with a handsaw. I know if I was caught doing what he is, I'd be looking for a new job.

If I cut a steak that crooked id be fired. Mistakes happen but when your filming something you should have nothing but perfect cuts. Goood to know a fancy saw like that can still cut crooked

If you don-t know what you-re doing do not touch a band saw. Most do not have safety features like this and I know more than a few people who have lost tips of fingers or entire fingers.

this guy is not an experienced butcher. so many mistakes. never seen someone just cut steaks out of the end of a short loin like that without shaving the bone down for a shell steak.

Screaming internally at the waste and inefficiency. That 'square' cut did nothing because he still had a wedge steak afterwards. but what do I know I do this 60 hours a week

I love when he walks away from the band saw the first time he has the blue gloves and when they show him walking back to the table the gloves are off

28 years started at 12 I would love to get in on this show. Love to see some of my retired butchers show you how to do this. The judges look silly.

Just for reference, there is a 2 nd guard for the band saw for pushing the meat and keeping it in place.

My husband cut his pinkie finger tip of doing this about 8 years ago. Wished where he worked had this bandsaw
