I would think that they had a much different skill set because they where on a ship and didn-t have all the things you could get on land. I know that Scappi sometimes used paper coated in lard. The Scappi recipes that use this lard coated paper were used on meat and fish the way we'd use foil today. Although I'm sure that fat coated paper would also be used to prevent cakes from sticking. So I wouldn't be surprised if well-to-do 19th century American kitchens sometimes used parchment coated in fat either to prevent a cake from sticking to the pan during baking.

The modern version of the recipe, which is included with the post, calls for 1 cup blanched almonds in the ingredients. In the method, it says to add the almond flour. I-d simply add 1 cup of almond flour; you could grind or chop 1 cup of blanched almonds, but this is a really light cake, so I think almond flour is the way to go. Would love others to offer their comments.

My Great G use to make real mince meat pie. The modern mince meat pies which, are very difficult to find, are only with fruit. The real mince meat pies was as the name suggests were made of meat. I believe my Great G would use lamb and/or venison. I would enjoy seeing the original meat version made. Thank you.

Hey Sohla! I would love to make this cake, but I don't have anything planned for the remaining yolks. Can I reduce the eggs to 4 large whole eggs, add the yolks after the butter, and fold in the 4 aerated egg whites at the end?

I believe it was Benjamin Franklin, he had a baked pumpkin dessert that was his favorite, it had cut up pumpkin inside of another pumpkin with a mixture poured in. I can't remember it all.

The closest i-ll ever come to this is the package of -/almond cookies, from France, that i buy at my local supermarket for $2. 99 for 16 cookies = 4 packs of 4, otherwise i-d eat the whole bag at 1 sitting.

Would love to see a Danish Wedding Cake made, it has rings filled with marzipan, it is just amazing almond flavour. It was served at my husbands Danish grandmothers 100th birthday celebration.

My mom had a sifter like that when I was a kid, except hers was the most old and beat up piece of kitchen equipment I had ever seen. I assume she got it from my grandma.

The French have always been known for their desserts. They make allot of desserts with cream. I wish I could spend the night in a French bakery. LOL!
