As I grew up eating many of these foods, I can only sing their praises. But I must object to the characterization of fermented maguey, popularly known as pulque. This isn't some kind of beer or liquor, yes, owing to its fermentation, it is mildly alcoholic, but in reality it is so much more than a refreshing drink that has some alcohol. It is very nutritious, containing most needed as monoacids and a plethora of other nourishing and nutritive properties. It was medicine and food at the same time and though its texture takes some getting used to it, if you can acquire the taste, it is among the most nutritious drinks in the world. Similarly the algae you describe, is today known as spirulina! It is once again, incredibly nutritious and beneficial.

2: 31. The corn kernels were NOT boiled! They were warmed up but not boiled! If you boil corn, you mess up the nixtamal process and the corn doesnt release its vitamins (B vitamins, amino acids, and softens the corn so that the outer layer is separated! The corn then absorbs the calcium from the lime.
The corn kernels go through the nixtamal process after adding the lime (calcium hydroxide) and soaking for about 12 hours our family does this overnight.
You can use ash in place of lime (calcium hydroxide, but it wasnt common in the 1900s and isnt common today.

Ive had an Mexican girlfriend for 3 years and im so happy that i met her i learned a lot about mayans and aztecs and modern mexico its roots and foods history and more she was from a big city Puebla i visited Puebla as well as Veracruz it will forever be in my heart mexico mexican people and culture despite we separated what can i say. viva mexico cabrones! xD

Polque wasn't made with classic blue agave it was made with the Century agave and when the tall flower grew sap would collect below the base of the flower and that sap collected and would be fermented. Not juiced like blue agave pinas.
