If you had a pipe to the bottom of the trench, it could easily hold up against the pressure so long as the pipe had a fluid inside with the approximate same pressure or higher to counter balance the internal and external pressures. The problem with people going down that deep is we are essentially sacks of jelly filled donuts with hollow air sacs called lungs that have evolved to exist at the surface pressure of 1 atmosphere or 101 kilopascals. Those soft tissues with gases inside are sensitive to pressure changes (higher or lower. The same issue applies to submarines that have an internal space for humans filled with air, that is susceptible to compression from external pressure force. If you made a drone submarine with all solid parts and no internal air spaces, then it could go to the bottom without much issue.

we've drilled much deeper than this for oil, gas, and samples in both land and ocean. Drilling takes a pipe to bore down to keep the bore hole open. the trick is keeping inner and outer pressures equalized so the pipe doesn't collapse or explode. An answer to why put a pipe down that deep: water can't be compressed but the gasses contained inside can. If that high pressure water was brought to the surface then decompressed through a turbine it could make electricity

What if we built a giant city size tank in the middle of a desert and created great lengths of piping and fed water into that tank to combat the rising sea levels? Will it help? Would there be a tiny weather system such as rain? Would there be more life there?

The real question here is what would be inside the pipe? Id assume either someone found a massive oil deposit at the bottom of the trench or it-s an oxygen pipe for an extremely advanced research habitat to study the trench

Keep water in the pipe and the only outer material (thickness of the steel) could easily withstand the pressure. As soon as you remove the water to air it would just collapse
