For me, I would want/like Hammer Hands& Stompers, Machete Buddy Pack, Field Ambush Supplies, Machete Elastic Wonder, Spy Watch, The World's Smallest Camera, and The Rehydrator [aka Microwave]. Also, maybe spy gadgets similar to ones from Totally spies.
