Christmas sugar cookies, roll-out dough with simple glaze icing

Christmas sugar cookies, roll-out dough with simple glaze icing Recipe, makes 4 dozen cookies 3/4 cup (6 oz, 170g) butter, softened 2 eggs 1. 5 cups (300g) sugar 1 tablespoon vanilla (if not using, replace with milk or water) 1 teaspoon kosher salt (or half that if you're using salted butter) 2 teaspoons baking powder 3 cups (360g) flour powdered sugar milk sprinkles, food coloring, etc. Mix the granulated sugar into the softened butter and then mix in the eggs until smooth. Put in the vanilla, salt, baking powder, and a third of the flour. Mix until smooth. Add the remaining flour gradually until smooth. Consider mixing in even more flour than indicated above, until you get a dough that's just barely sticky. Cover and refrigerate for at least an hour before rolling. Heat oven to 350 F/180 C convection, or 375 F/190 C if you don't have a convection fan. Dust a large work surface liberally with powdered sugar or flour. Roll out the cold dough, nice and slowly, rotating it very frequently as you go to make sure it doesn't stick to your work surface. When it's 2-3mm thick, use cookie cutters to punch out shapes. It works best if you push straight down then twist a little to release them. Put all the cookies onto baking sheets lined with parchment you can position them very close together. Gather up the trimmings into a ball, but get the ball cold again before rolling it out and punching out more cookies. Bake until the edges just barely start to brown, about 20 minutes. Consider rotating the pans halfway through, especially if you don't have convection. Let the cookies cool throughly before decorating them. To make your icing, put a lot of powdered sugar in a bowl and whisk in just enough milk to turn it into a smooth glaze it won't take much. You can add food coloring to the glaze, but you may need to add more powdered sugar to balance the extra moisture. Ice and decorate the cookies, and let sit overnight the icing will harden and the cookie will soften

Hey Adam, I think you was wrong saying that stone counter helps batter not to warm up too quickly, i guess you said it just because stone countertop feels cold to touch compared to the wooden one, but truth is that stone (as well as metal) feels colder just because it's more thermally conductive(even if it's the same temperature as wood, which means that it can give off or receive heat faster than wood. Countertop is colder than your hand, so it sucks heat out of your hand faster than wood, therefore feels colder. But in the case of cookie dough it's the opposite way! Countertop is warmer than chilled dough, so the stone countertop will give off heat to the dough faster than a wooden one, melting dough faster. I hope I am right and it makes sense

Hey Adam,
Are you sure that a stone countertop would keep the dough cool? I thought the reason that stone and metal feel cool to the touch was because they conduct heat better than wood or plastics. If anything a stone countertop would warm the dough faster.
If you put ice in a metal bowl it would melt faster than if you put it in a wooden bowl as long as they are the same temperature.
Love your videos and learning from them btw. Just trying to make sure you provide the most correct information to everyone here.

Why would a stone counter help with not warming the dough? The stone might feel cooler to your hands, but no matter of what material the countertop is made, it will be the same temperature as the room it is itself. If anything, the stone will warm the dough faster because it has a higher heat conductivity.

As a jew, i can say this tradition is better. Sufganya is just a jam filled donut. Sugar cookies are really unique and just a christmas thing, and by eating too many you get just a stomach ache, not a siezure or a heart attack

So yummy! For quickly warming butter, I like to do it by putting boiling water in a cup, removing, putting the butter under the cup, and wait like 10 minutes for it to become room temperature.

I was just looking at the consistency of that dough and i just realised what my mom makes when she says shes gonna make cookies
(Im middle asian so we donzt have a lotta cookies in our culture)
