Iranian pickled garlic has almost the same color to it. It is simply stuffing a glass container with as many whole garlic as you can and add vinegar and salt to it. And then store it in a cool place (50-60) and let it be for 7 years. 7 years is the sweet spot. It is mostly eaten with fish and it has a very complex taste. Sweet, sour, salty and umami. Andy should know about it. As it takes years to make it, Persians usually have it in special occasions like with Persian New year's fish.

I think my 60 presto food dehydrater has a temp gauge. I can't say it's SUPER accurate, but it was helpful when I was experimenting with malting my own buckwheat for beer. (couldn't find buckwheat malt. I had mixed results with the malting process, which, honestly, would be an interesting topic for Brad to cover, since it's basically semi-sprouting grains so that the starches convert to sugars due to enzymes released during the germination process)

I am so very allergic to garlic and it really hinders my ability to eat delicious food and right now I'm watching this wondering if this process would break down the compounds I'm allergic to. Proooobably not worth the risk of finding out first hand? Probably. Maybe. I just miss being able to eat garlic and shallots without feeling like I might die: (: (: ( And I live in fear that onions are next: (

Yeah. I made this by accident when I put some garlic in a drawer for a few months and forgot about it. my flat is at an almost constant 65% humidity (yay Scotland) but the temperature is MUCH lower than the dehumidifier so I have no idea how it happened. maybe it was left for longer. who knows. whoops?

Brad, I believe the metaphor of vampires and garlic is vampires signify illness/disease (vampirism is considered a disease in alot of fantasy lore. That also explains why they die in sunlight, similar to various disease-causing bacteria that also die in sunlight.

Nuwave has a good dehydrator that also works like an oven. It is good but since it doubles as an oven it auto sets to 350 so set the temp every time even if you pause it reset the temp to the desired temp which it is number based.
