as an italian from sicily, I remember the arancini big time. Allthough we didn't use risotto, but simple cooked rice and filled them with bolognese sauce and mozzarella. We also shaped them pointy on one side of the ball. Arancini are an enourmus part of my childhood and it's quite interesting to see this method. I'm gonna try to make them this way for christmas.

Sorry Molly - you need to spend some more time in the kitchens of southern italian cooks. There is no such thing as a dry arancini. The rice mixture is is not called 'risotto. 'Risotto' is a lovely, fragrant, creamy dish made with rice and your choice of vegetables or fish. Riso is the base of the arancino. Arancini's. the new mozzarella sticks? No, grazie.

Omg I just made these the other day bc I saw a video/recipe on Facebook and I actually had all the ingredients so I said why not. Recipe called for rice and not risotto though, and I did not put onions since I don't care for them. They actually came out fantastic, and then I see you guys have a video on it, awesome

These arancini are definitely a twist on the classic. The ones I know include saffron to color the rice as well as tiny bits of parsley and/or a few peas in the rice, a dollop of tomato sauce in the center with a cube of mozzarella and finished into an iconic cone shape. Your gourmet version does look delicious though

you wanna know why arancini are always so dry? cause you guys make them THE WRONG WAY Usually in sicily we cook saffron risotto and stuff the arancinis with ground meat and peas. and the real size of arancinis is about the size of a fist. keep that in mind thanks

I feel bad because I feel like judged Molly before because I compared her to Brad, Andy, Chris and Claire like shes not as happy go lucky and I think it was really unfair of me. Molly I think youre wonderful and Im sorry it took me a minute to appreciate you for you.

Man Italians really are the worst. She said that something was Sicilian instead of Calabrian and they decided that the whole recipe is bad and molly is a terrible chef. Must be exhausting to be so uptight and boring 24/7

Don't know if this has been mentioned, but deep fried risotto balls with mozzarella inside are called suppli al telefono (telephone wires. Arancini have either some kind of ragu or vegetable as filling.

Real quick: Calabrian chilis cant be Sicilian. theyre literally Calabrian (from Calabria. thats a different region in Italy. entirely. Arancini are Sicilian. Calabrian chilis are calabrese. Have a nice day.

there was a restaurant near me that had something really similar to these they were soo good but they closed ): can't find anywhere else in my town that has them, i'll have to try making it myself sometime
