Everybody loves instant ramen, with its ludicrously salty, umami-rich spice packets and its impossibly wavy fried noodle bricks. Noodles: Wheat flour, high in gluten (look at the protein content, 12% is ideal, 55% Water by wheight, salt, make a dough, knead until stiff, let sit for 30 mins. Knead again until stiff, let sit another 15 mins. Roll out the dough to something below 1 cm, oil on the outside, let it sit for 30 mins, covered. Use pizza-cutter to cut thin stripes, pull. fold, pull again, until they're thin and long enough. Put them into salted, boiling water, bring to a boil again, add a cup of cold water, boil again, repeat a third time. Shock noodles in ice water for that nice texture. Sauce: Put them noodles in a bowl, add chili-flakes to taste, one small teaspoon of each: ground green szechuan pepper, freshly pressed garlic, salt, sugar. Add spring onion and msg to taste, baise with blistering hot sunflower oil (just pour it over the spices on top of the noodles. Add one tablespoon of each: black rice vinegar, soy sauce, sesame oil / vary to taste. decorate with cilantro, crushed salted peanuts, bean sprouts, .mix and enjoyAnd thank you for your wonderful video

I rarely use the packets that come with the noodles. usually spice it myself. At first I used the packet and add some salt, garlic powder and maybe little curry powder if I feel it to add in some good taste, maybe black peppers and soy sauce if you want, or ground chili. At some point I ran into this spice mix, it was AMAZING Adding it to a the noodles just made it so much better, I lost the spices but searched for it for so long until I found it, then bought 1lbs of it. It's a tandoori masala mix if anyone wants to try, you can look online on the ingredients if you don't have access to it. It is also amazing for spicing burger patties, never tried it on chicken but I am assuming it is to marinate chicken. If you can't get your hands on it, just adding salt (be mindful as usually they are pre salted to begin with, garlic powder and peppers to the noodles improves the taste greatly.

You have no problem with MSG? Then you have no knowledge about MSG. Never think you know about something when you are educated by the very pushers of the product. What does it say about ones cooking skill when they must depend on toxic chemicals to develop their flavor? Not much Im afraid

Them: Yea you overcooked the noodles Me: How? The noodles haven't even soaked up all the water. I let the ramen sit to soak up all or a good portion of the water so that they are thick and fluffy but I don't use the flavor packet I use my own seasoning and vegetables.

This definitely has MSG in it. The 2% yeast extract is the undercover MSG, along with the Disodium Gunalylate. Unless it says No MSG on the ramen packaging, it will have MSG. If you watch EmmymadeinJapan's most recent review on the brand ViteRamen, she discusses MSG.

I believe what makes the commercial ones wavy, are two silicone flaps below the cutter rollers, that almost meet in the gap in the middle, that cause the noodles to bunch up after they're cut, before they fall through the flaps and down a ramp.

My stoner chicken ramen recipe: Drain all the water your supposed to use for the broth, add the packet of the seasoning, ranch, sriracha, and sesame oil to the noodles. You can thank me after you smoke a bowl, and eat some fire noodles

I think Alex the French guy cooking had the right idea when I came to ramen. That is get an industrial machine to do the working of the dough. Its impossible to do by hand really and get the same texture. Great video regardless.

Wow, a left-handed chopstick user. I am Japanese American, and I eat a lot of ramens. I hate instant noodles. Ironically, instant noodles in Japan taste great, and it tastes a lot better than the best ramen shop in Little Tokyo.
