yeah, this isnt pav bhaji, but have u noticed that in all the videos she has, she always calls her family to sort of guest star? that's where ALL these recipes are from, her born-and-raised indian family. who have spent probably most of their lives in the united states. that's what indian-ish means. it's not authentic to india, it's authentic to her life as a nonWASP americanthis isnt a defense or anything, just an explanation. her parents are actually from the old country, and theyve been feeding her well all her life with food that is markedly different from what the other kids in her area have, so why should she be suspicious of the authenticity of what she's been handed? would u? i wouldnt, and i doubt any of u would

This is lazy, inauthentic cooking. And not just this dish. Its true for the other ones that Priya has showcased on BA. For any recipe, theres the technique and the ingredients. I can understand that all ingredients might not be available. However, one does not abandon the technique. especially the signature ones. For example, the signature technique of the Bhaji in pav-bhaji, is the repeated scorching and de-fonding of the mashed-up veggies with copious amounts of salted-butter. Its the emulsified fond-gravy that brings the aha. Sorry to say but get someone else to showcase Indic cuisine. BA is unique because it does not abandon nuances. Priya is too lazy to bother about all that.

I grew up in Mumbai eating the best pav bhaji on the planet. Now, I understand there could be variations. small differences in ingredients, healthy takes on rich dishes. but sorry, what Priya made here is NOTHING to do with authentic pav bhaji. Basic ingredients missed - wheres the pav bhaji masala? Its certainly not chili powder and coriander powder or whatever she put in there. Wheres the bell pepper? And potato rolls? Pls stop pretending you are making authentic pav bhaji. It is frustrating, as a Mumbaiite, to see a Mumbai staple butchered this way

I guess everyone loves her, FYI I am Indian and in my opinion what she made isn't really 'pav bhaji' in the traditional sense. She just made a generic potato dish. And what makes me mad is that she didn't even highlight traditional Indian ingredients Ever heard of ghee Priya? Olive oil and butter, really? (cue eye roll. Super disappointed that Indian chefs can't highlight the cooking traditions of their own country and unfortunately pseudo-Indian cooking videos like this get millions of views.

I am thrilled that Priya makes these recipes with a different take. As an Indian, I never compared Pav Bhaji with a sloppy joe, but it makes total sense. I tried her idea of chhonk on a pizza and for me, that elevated pizza to a new level I mean pizza. made better. by chhonkIMO, she represents a more fluid, experimental, multi-cultural generation that has a different interpretation of food and cooking methods than previous generations. I cant wait to see what she comes up with next

Dear people who are commenting things like this is not a pav bhaji and stuff, this is the video for you, go away. Bon Appetite does not show traditional recipes, it shows a newer take on those, it shows an easier and delicious take. So if you want to watch traditional pav bhaji, there are tons of videos on the internet, watch them. Stop polluting the comment section and grow up. It will not kill you if a certain dish doesn't have masala or butter in it.

As a person born and brought up in Mumbai, where this dish was born and cand be found everywhere. I will call this a good try. If this was served to any mumbaikar as a pav bhaji he she would throw a fit. The bhaji is too dry, a range of powdered spices is missing, its not mashed enough. It doent have that deep orange colour, and more importantly a ton of butter is missing. Great try. But ill pass.

BA is super east coast/huge city centric. calling for tons of regional ingredients, high end ingredients that are extremely difficult to find outside of the mid atlantic are of NYC south to DC. I can't replicate at least half of the recipes as called for for these reasons. I live about as far from the coast as you can get. buying specialty ingredients through the mail is a wallet killer.

Watching Priya makes me unreasonably angry every single time, because she never uses the goddamn paring knife for it's intended purpose. Who the hell chops things with a paring knife? And who supposedly has worked in kitchens before, but cuts anything with their fingers sticking out all over the place? My anxiety levels can't handle this mess.

Hey Priya, not sure what source you have referred to before filming this video but looking at the end product in the first 20 seconds of the video I can tell you this is not how authentic Mumbai Pav Bhaji looks like (even in the sloppy joe form. I love the BA videos in general so just wanted to make sure that I point out the flaw here.
