I love Carla, any time there is a video with her I click immediately. I got the Jean Nate reference, my grandma bought me a huge bottle of it for some holiday when I was a young child in the 80's. This looks so yummy I make a version of a soufle omelette with lemon and blueberries, I start mine on the stove and then finish in the oven so it sets top and bottom (I hate soft egg. will definitely be trying this version

Thanks you for justifying the way I separate eggs I've always found I can get a more perfect separation, faster and more reliably, by using my hands. I also run a thumb around the inside of the shell to get that last bit of white People are so afraid that egg yolks will burst like a bubble as soon as they touch them. But I manhandle my yolks and pull off the last thickest bit of white detached and they're always fine.

Tried this. It looks fun and interesting but honestly I hate the taste. Fluffed eggs doesn't taste as good as a simple sunny side up egg. Unfluffed eggs like scramble egg, sunny side up or poached eggs with runny egg yolks are the best way to eat eggs in my opinion. But fluffed pancake is awesome since that is more like a cake and just pure eggs.

I have made my omelets the same way for over 50 years and my method is not the way that anyone on the YouTube makes them. They are, IMHO, Souffle Omelets. One of them will usually feed three people and is a complete meal. I have even made dessert ones.

I hate when people say that uncooked eggs is the right way to enjoy an egg. I don't like them not firm and well done, like soft yolk, it makes me want to puke. Food it's about how you experience it, and if isn't making you feel good, then isn't the right way for you.

I have to stop whisking because I need to explain this with both hands is totally me everyday at work in my kitchen cuz if I dont stop then I talk with both hands one with A chef knife in it and for some reason thats frowned upon

You can cook eggs in the microwave oven Just make sure you break the yolk as can explode in microwave. crack two eggs into a corelle or pyrex bowl and add spices and beat eggs till blended, cook on pizza setting and repeat

Mine didn't turn out perfect, the egg in the middle wasn't fully cooked next time I'll use less eggs or a bigger pan haha. Still, what was cooked was really an interesting experience. Kind of spongey, airy and light.
