Gaby Makes Tortilla de Papas From the Test Kitchen

Join Gaby in the Bon Apptit Test Kitchen as she makes Tortilla de Papas. Salting the potatoes ahead of time draws out some of their liquid and guarantees theyre well seasoned, but skip this step if you want some of that moisture when you take a bite 10 large eggs Freshly ground black pepper 2 tsp. kosher salt, divided, plus more 2 lb. Yukon Gold potatoes (about 6, peeled, cut into slices 2 cups extra-virgin olive oil 1 large onion, halved, thinly sliced lengthwise Beat eggs, pepper, and 1 tsp. salt in a large bowl; set aside. Pat potatoes dry with a clean towel. Heat oil in a large nonstick skillet over medium-high. Cook potatoes, turning occasionally, until tender, 810 minutes (you can cover the skillet in the beginning; the potatoes should be white, not brown. Add onions in batches and cook, stirring occasionally, until softened, 46 minutes. Using a slotted spoon, transfer potato mixture to a rimmed baking sheet and let cool slightly. Strain oil into a heatproof bowl. Wipe out skillet. Beat eggs again until frothy. Add potato mixture to eggs; season with 1 tsp. salt. Heat cup reserved oil in same skillet over medium-high (chill remaining oil and reserve for another use. Add egg mixture, arranging potatoes to submerge. Reduce heat to medium and continue to cook, making sure potatoes are submerged but mostly undisturbed, until eggs are almost set and top is still slightly runny, 1520 minutes. Invert tortilla onto a large plate, then slide back into skillet browned side up. Cook over medium heat until golden on the bottom and cooked through, about 5 minutes more. Cut into wedges. Serve warm or at room temperature. Do Ahead: Tortilla can be made 2 hours ahead. Let stand at room temperature

I love Gaby and the fact that I have a similar accent to hers (bc I'm Spanish native speaker) and I feel really mad about I can't talk like an English native speaker. Even when I know it's almost impossible for a person who was speaking in Spanish for almst 20 years, and English just for 3 years or so. But she makes me to feel confident about the way I speak and the way I pronunce the words. We need mor Gaby's videos

Used to make tortillas like this in tiny cast iron pans to order all night long and would pop them in the oven but trying to not get the golden brown (which I prefer) and keeping the color consistent was a technique to hammer down. Love her common sense attitude and by far my favorite to watch on these vids. I'd love to hear her talk more castellano it is such an elegant form of spanish lovelovelove her

That is the worst tortilla with onions that you can get: crunchy onions ruin the tortilla. Those onions are severely underdone. They should have been added first, or together with the potatos, if you wait until the potatos are done, the onions will have not time enough to cook properly, and caramelize a bit, that is what gives onion flavor to the tortilla. Huge fail, this.

In Spain we would never put the potato slices in water because then they will retain that waater when you put them into de hot olive oil and splash some at you (something you don't really want. Just clean your whole potatoes and slice them. Easy And a tip to get a very spongy tortilla de patatas is to add a bit of milk to the egg.

I'm from Spain, and even if the lady got the recipy right, it made me feel like if a spanish person did a video making tacos, even if it's well done, it's not the same. And by the way, is tortilla de patatas, no tortilla de papas. In Spain papas are potato chips.

Sooo. I'm gonna get out the moisture(without using salt and per the way she wants) from the potatoes by putting them on a towel while being almost flushed with the bowl? So the bottom and the middle will have a higher content of moisture. But I still love it.

THERE IT IS. I speak Castllian. Uhhh almost all of Latin America does too, and I would say, the way she pronounces tortilla is not technically correct. The Argentinian arrogance is well known throughout Latin America. But she's still a lovely person

I love how gaby represents Argentina in all the videos she's in. It makes me so happy to see someone from my country doing well in the US, as right now Argentina is having a lot of political issues and just issues in general.

I love how she uses the onion like its not a big deal whilst in Spain we have been fighting for years over whether a tortilla de patatas should have onion or not. It is an issue that has divided families, divided the country.
