Join Rick Martinez in the Bon Apptit Test Kitchen as he makes pork tamales. You can make masa, a dough made from ground corn, in two ways: instant and fresh. Fresh yielded the best corn flavor and best texture, but you can use corn masa flour too, which is easier to find. You can find fresh masa and dried corn husks at tortilla stores/factories, international sections at larger stores, or online. Whichever masa you choose, be sure to save some of the chile pure from the pork filling

You mentioned acid/vinegar is not very traditional but, everyone that has shared their tamale recipe always puts apple cider of pineapple vinegar in their filling. Never seen pineapple vinegar in the US though. I cant wait to try your recipe. Love the ratio of filling and masa.

I really enjoy the fact that Mexican food gets represented properly by Rick. So many people want to do these Frankenstein creations for content but we just want that authentic take on food we grew up on. He does add his flair but the spirit of the dishes never get lost.

I love Gabi Rick in his maradi gras parade. I love tamales. Sweet and savory. No such thing as a bad tamale I love anchos too, poblanos rule. Lard is the only way and better for you than oil. Corn, yellow for savory, white masa for sweet. Oh I miss tamales.

I love how they don't address that intro at all. no explanation like 'oh, these rose petals were going bad so we decided to have fun. ' just straight up parade in then nonchalantly start cooking lol.

This is almost exactly how my wife's family does it, but they eat the tamales with nothing but lemon and salt. Oddly enough, that's all they need. It's incredible.

I paused watching another video to watch this one and really felt like that intro added to my hype to watch Rick make tamales. So appropriate.
