I don't think that guy is the founder of raindrop cake, I'm pretty sure it's a traditional Japanese dessert that he just recreated in New York and made that kit and named it just raindrop cake which will easily interest potential customers. He (and you guys) didn't explain that very well and his vibes felt off for some reason. I'm sorry, I like your videos, Bon Appetit, and most of your guests, but he just wasn't one of it.

kind of weird to make an agar dessert without mentioning anything about how east and southeast asian communities have been making agar jelly cakes forever? the most we got was the founder of raindrop cake in nyc saying he based it off a japanese dessert but the rest of the time was just spent talking about how weird it is and whether or not it's a cake.

Agar is used widely in microbiology (it's the jello where they grow bacteria, molds, etc, and the scientist who introduced it to science learnt of it through his wife who would use it for cooking Now it's a must-have in every lab. science
