Join Priya Krishna in the Bon Apptit Test kitchen as she makes Kadhi. Kadhi is similar in texture to cream of [fill in the blank] soup, but with no cream, andwellbetter. All you need to make it are yogurt, chickpea flour, and spices. But dont let the simplicity fool you: Kadhi is both deeply comforting and insanely complex in its flavor, like a cozy blanket draped over a hot bowl of white rice. The exact recipe varies from region to region in India, and sometimes includes add-ins, like chickpea flourbased fritters called pakoras, but we like it thick, rich, and spice-forward, with a pleasant tanginess at the end. If you dont like peppercorn flavor, feel free to nix them or cut the amount in half

You can hate me for it but It really annoys me how the video is titled creamy Indian soup, like what do you mean are you kidding me imagine if I said creamy American soup or brown German soup or something no you'd just use the proper name for it wouldn't you so then why is this creamy Indian soup with the name in the bracket and yes I know target audience and whatnot and you can think I'm being overly dramatic and sensitive about this but still it is what it is OK rant over bye

The number one thing I hate about Indian parents is how they shove this stuff down our throats as children because of how easy it is to make when it has close to 0 nutritional value other than starch and a little protein in the yoghurt. The accompanying rice is just more starch. This food is quite lowly even for Indian standards but is commonplace in northern Indian households. As a long time hater of Kadhi, imagining this dish dying a slow painful death makes me so happy.

As a non-American I wouldn't have understood the debate-talk clip but for a brilliant Radiolab episode (called Debateable) that covered it a few years ago. Kadhi looking good. Only complaint is that she didn't use the fresh water to fetch the remaining paste in the measuring jar before adding it to the pot. It's something that Indians would instinctively do. I feel the waste-not-want-not approach is as important to Indian cooking as the ingredients and method.

I will make this soup tomorrow right away Brilliant idea also for vegans who feel like something creamy (like me every second day)Also now I know I am not the only one who doesnt like things floating in soup. Only soups with clear broth are allowed to have solid substance. The same goes for porridge. Creamy silky texture combined with solid details is a no go. Sauce on top of solids however, is alright.

My mom and aunt always made Kadhi and I loveeeeed it so much. For me eating Indian food was just food, and mom always made it so I never bothered learning it. Now that I am studying abroad I realllly miss my moms food and especially kadhi which was always made on special occasions. I am glad Priya is teaching me how to make these recipes

As a Punjabi, the fact there are no Pakoras is your Kadhi, especially cuz Im so Punjabi I put anaar pakoras in mine, gotta side with her mom. also does anyone else put anaar dana in their tarka? Also. kadhi and chawal? My fam eats it with a chamchi

I cannot make kadhi without panchphodan that has fennel seeds+ grated ginger garlic that I don't cook in oil. But I do cook a mixture of dhaniya powder+chilli Powder+ turmeric in little water and cook in oil after quick roasting whole spices.

i hope im not the only one, but i really enjoy when other chefs or staff eat whatever was made in the video, makes it feel more connected and whatnot. really missed it this time, still an awesome video, love priyas stuff
