Join Melissa Miranda as she makes Lumpiang Sariwa, Filipino spring rolls packed full of fresh vegetables and tofu. While this dish isn't always vegetarian, this medley of veggies bring a beautiful color and snap to the spring rolls. And instead of using store-bought wrappers, Melissa makes her own that consist of just five ingredients, but are packed with flavor.
Ingredients
Wrapper:
cup all-purpose flour
cup cornstarch
1 tsp. kosher salt
1 cups water
5 large eggs
Non-stick cooking spray
Filling:
2 large carrots, peeled and cubed
1 cup peeled and cubed sweet potatoes
head purple cabbage, shredded
1 cup green beans, cut on a diagonal
medium onion, chopped
cup finely chopped garlic, divided
block extra-firm tofu (about 7 oz, drained and cubed
1 Tbsp. vegetable oil
Nutritional yeast to taste
1 Tbsp. liquid amino acids
Sauce:
cup light brown sugar
1 cup coconut milk
1 Tbsp. amino acids
2 Tbsp. cornstarch
Assembly:
1 small head red or green lettuce
Garlic, finely chopped
cup cilantro, chopped and divided
Peanuts, roughly chopped
Johnny's seasoning salt, or salt and pepper, to taste
AaronShenghao: It's Filipino Spring Roll. Not (Chinese) Spring Roll we known of. And yes its like calling a Pizza a sandwich, I don't approve it. The Filipino part is important. Its a different dish. Date: 2021-03-31
