Call it anything, just not a Peking duck man. Skin is too charred, Peking style meant skin is the star, everyone knows how a Peking duck looks like these days. Nothing wrong with calling it a roast duck, it is.

The making of the Peking duck has so many wrong steps I don't know where to begin.
I guess it's good enough for people in NYC who never had the read thing before. But I wouldn't bother visiting this place.

I know it wasn t on but seeing the chef pull out the tray of smoked ducks from the oven with his bare hands seemed so wrong
