'to be completely sustainable to the point where not a drop of water hits the floor of the shop', meanwhile the video very clearly cuts to their process of using a knife to shave off ice which falls on the floor, just to get a perfect shape. The owner seems chill and all but that was pure nonsense that came out of his mouth. The very nature of a product whose selling point is its unnatural aesthetic goes against sustainability. Nothing wrong with wasting a bit of water, everyone probably wastes more in a day but at least don't pretend you care about saving water when you're running a cocktail ice business.

Damn this guy really worked in some of the best bars of the cocktail Renaissance and then turned around and started a business on the most universal ingredient of a bar. I'd loved to meet him some day

As someone who grew up drinking water from a 900 foot well in the mountains of appalachia i can personally attest to NY water being complete and utter garbage.
Good thing he's filtering it.

I started making my own clear ice at home about a year ago for my home bar and it absolutely makes a difference. I've almost become a snob about friggin ice as crazy as that sounds.

I like when the bartender don't make any additional move when he shake the cocktail because sometimes i feel bored when some of them just showing off and cringe on my opinion

I can't help but think about how he's using his outside clothes to handle what is essentially food while talking about how the ice is free from impurities like oxygen

I wonder what chain he's using on the chainsaw mill. A 5 Degree tooth specifically designed for slab milling may give the ice slabs a better surface finish initially.

Could you freeze a molecular sphere of something within a sphere of ice, essentially making a cocktail that evolves with time?
