Yum! Loved your recipes; particularly the dip and cassoulet. I love a fat club sandwich the day it comes home, then some curry chicken salad for the next day. If I don’t use it up in a day or two, I simply section it off and stash the baggies in the freezer. It makes up nicely later when I add it to a curry sauce with some veg, or add it to a wrap with a bit of spinach. A big yes on making stock (or soup) from the bones.

It's awesome how there's a built-in pipeline with a grocery store rotisserie chicken, a pressure cooker, and a container of frozen veggie scraps over the course of a week - the synergy simply can't be overstated. Buy the chicken & veggies on Monday, use the scraps on Saturday for a beautiful stock that makes an awesome chicken soup (for Sunday, maybe. Basically zero effort except dish-washing.

It's great to see Brent doing good. But I was kinda hoping some sort of info on how things have changed. And most importantly if hi. And see if him and Ben are still on good terms.

The chicken stock from the rotisserie chicken carcass was a game changer for me. It is very flavorful and has so many uses.
