These guys take it so seriously and reverentially that they miss the point: a helium-filled blown sugar balloon is not a 'step forward in cuisine', as gastronomically it is incredibly unremarkable - the diner is left with a gummy wad of caramel. What it is, is fun. The diner gets to eat a balloon, have a squeaky voice and probably laughs. It's just fun, it's just food. Manipulating food is adding chemicals which so many of these restaurants do to experiment with texture etc, but I feel it is all perverse, and missing the point of true gastronomy. If a chef who is plating using techniques Michel Troisgros was using in the 90s thinks he is creating anything new, he or she needs to get over themselves. There is nothing new. Thumbs down

You go to these kinds of restaurants to experience a TASTE you've never experienced before. To have a unique memory of a dish that lasts a long time that'll make you go, Wow. That was amazing that I can still remember the taste. You don't go to these kinds of restaurants to get filled. No. Also, the reason why they're expensive is because of the ingredients. In these expensive restaurants, you won't find those ingredients in walmart or your grocery store. Some of these restaurants even have their own garden! And some restaurants have dealers that won't sell their product to anyone else. Once again, these restaurants are meant to make your mouth orgasm.

Literally don't care how good it tastes, it's simply not worth the price. Nothing, not a slice of heaven pie (should such a thing exist) is worth more than like 30 bucks. Food is a thing that sustains you to get through life. Period. It's not nor should it be ANYONE's center, sole, or even major form of enjoyment. Moderation in all things, including moderation. This is literally reverse rome, decadence to the point of disgust, but not even filling.

All these people complaining about how the dishes are too small and its too expensive for such little food, this isn't about satisfying hunger. Haute cuisine is much more comparable to going to a concert or an art gallery. It's about different experiences, not consuming calories. Also, if you ever had a 10 course meal over a 2, 5 hour timeframe, you are going to be full.

Real Talk - how do you figure out what parts of the dish are edible? Like, with the oyster on the giant pile of white mush. Do you eat the oyster out, put the shell to one side and start eating the mush? Do you take the shell, upend everything on top of the mush and eat it that way?

people here dont understand this world. its amazing. its interesting! im a chef and the long hours trying to understand the dish and making it perfect so the guests gets a pleasent evening is everything for me! love my work and i love the way I sat my mind for, and that is cooking.

The funny thing is that 90% of these fine dining chefs would rather eat at a good food stall on the street. It's one thing to experience and another to be truly satisfied. And oftentimes, the simplest of foods give you both.
