Let me try and put this argument of best BBQ to rest. Simply there is no best. I've had great BBQ from many restaurants with people who own the restaurant and do competition. Most are good few stand out. Now on the other side I've had great BBQ from people who don't own a restaurant or do competition. Yet are better. You can't put a label on the best because there is always someone who does it better and they don't put that out there. I like to think the best is always around the corner. No matter where or who! You'll always be surprised if you keep looking.

This is BBQ heaven and whoever wrote about Lexington BBQ is also spot on. We here in NC respect the friendly debate on East vs West. Let me tell you, it's all good. The Jones family, the Monks, the Stameys, the Bridges, all these families have created a BBQ legacy in this great state. Great video and a great family represented here. I live in the western part of the state and going to Ayden in on my BBQ bucket list.

First time my company in NC did a pig picking after work in the back parking lot, the caterer opened this big black metal smoker they had towed in, and the guy puts on rubber gloves, opens the smoker and sticks his hands into this whole pig lying there on the grating and just rips out pieces of it with his bare hands and throws it onto paper plates. It wasn't a very appealing scene to me.

When I visit relatives in Lexington NC, one of the highlights is having, almost daily, barbecue. It might be the addition of vinegar in the sandwich which is very piquant and cuts the richness of the pork. It makes for one helluva sandwich. Yessir, best pork barbecue ever!

Running the places and being the face of these places are one thing and actually being the pit master are another thing. The guys behind the scenes. Those old Pit Master guys should be the highest paid people in those businesses. but I'm sure they've not had raises in years.

I don't prefer the texture of Carolina BBQ + with all that vinegar you have a douched pig. Top BBQ area is Memphis, not the Carolinas. Carolina comes in 2nd, then Kansas City, who kills it with too much sweet sauce, and then Texas, because there is no BBQ in Texas.

that BBQ is nasty asf. by the way. he says king James of BBQ. king James was a slave owner who also help write document on how to keep blacks enslaved and down. the method is still used to this day. turn blacks against each other instead of beating them as slaves.

I'm sure they did cooking on some level, but usually the real people who've always done all the cooking and have an eye for cooking and know flavors aren't ever shown in the videos. The people that actually do the cooking at these places.

Just because you've been doing it doesn't necessarily mean you should continue doing it. You shouldn't be chopping up pieces of wood into people's food. Seriously. How do you blow that off as just neither here nor there?

Great bbq don't need sause. the flavor of the bbq should speck for its self. Keep it simple you will never go wrong with great bbq. cooked whole hog. its the only way in eastern north carolina to get it right.
