Dhamaka is one of NYC s most exciting new restaurants. We follow chef and co-owner Chintan Pandya as he gets ready for dinner service, setting up and testing out different variations on dishes like pressure cooker chicken pulao, gurda kapoora, goat neck dum biryani, and more. Pat: I mean good job for maintaining the integrity of the dish (mentioned 28737x) and testicles being mentioned more than necessary. I wish I could try their testicles with integrity of the dish.
Did I mention testicles? I think he's serving some of those.

This would really change the perspective of westners looking to try proper Indian food and not any kind of commercialized crap from all other restaurants!

You know there will be some good food when they use all parts and nothing goes to waste. Long tradition of making the best out of very little while still making it as good as possible.

Pressure cooker is such a quentisential cooking equipment in indian household.
Never saw it being used in restaurant, this chef is amazing in terms of innovation

I always prefer to wait a little longer as a guest in a restaurant because I prefer fresh and hand-made food. Great job guys!
