Cliff, I've made so many different French onion soup recipes. One if the ingredients I've found that gives onion soup a special extra flavor profile is very finely chopped celery. I like to put it in when I put the onions in. I also like to put lots of sourdough baggett croutons on top, then add the cheese as a simple bechamel (Swiss type cheese, whole milk, nutmeg, soft flour. Broil. Ahhhh yeaaaaaah.

I recently learned how to make demi-glace in a cooking class, this would be a good way to use up some of my practice sauces! I wonder how this method would work with other soups, like tomato soup jelled and cubed into croutons.

Bread crumb onion rings are nasty. Hipster foodies invented it to add more layers of texture or some crap. 1 egg, 1 cup of flour and maybe 3/4s of a can of a dark beer makes the best onion ring batter.

Hey for this recipe we're going to use a crazy chemical called guar gum. BTW we're not going to add baking soda to the onions, a well known trick to make them caramelize more.

Got to say it but the make up team did a good job. My brain got confused for a solid minute remembering that he looks Asian but why now he look Italian.
