Not all over Italy serve pasta. I was in Tuscany they serve steak and potatoes. Filipino when serving Filipino food must remain traditional and dont ever change just because theyre in Italy. Italians are proud about their cuisine even though Marco Polo brought noodles from China. Be firmed about your ethnic tradition and that is other ethnicity will respect Filipino cuisine. Here in Arizona there are Filipino restaurant but as Filipinos myself and I came from long tradition of Filipino cooking, it hardly for me to respect some of Filipino restaurant, because many establishment are not clean environment. I used to live in Palermo Sicily and their food is mostly influence by Spaniard or Bass. If you serve Filipino food then serve Filipino food. Dont try to adopt the culture of food just because your in another country.

travelled all around the world- and phillipino food is the worst in the world. just poor crude versions of other asian dishes. mi goreng? becomes crappy pancit. tom yum becomes crappy sinigang. curry? kare. their food is fatty, unbalanced- with few fresh vegetables and ingredients, over processed and crude- a result of american influence, poor produce and poor taste. the people reflect it- the highest incidence of heart problems in asia and diabletes- and would probably be more if more people had access to go to a doctor to actually record it. i ve lived there for 8 months- and it was the hardest time I've had to endure- in terms of diet. and I've been to prison. .

When in Rome do as the Romans. Why drag a culture you escape from? Italy is beautiful. Until it becomes more and more like the dark places some people escape from because they felt the need to be Proud of illusions. Not condemning anything. But I can totally sympathize with those who visit Rome for only 3 days and then they get hounded by People from their country, who misses home. They ruin their experience of Rome. They came to see Rome. But then on their way to tourist spots someone speaks to them in their own language and waste their Time and most of all ruin the ambiance.

Plating should be kept Authentic. Europeans want Authenticity. Putting Red Radish or Turnips on Crispy Pata is like putting Calamansi lime on Sushi or Sashimi. And the Sinigang was an overkill, it had okra and chili peppers, and Tamarind. The average Filipino can never find such soup fish in any of their eatery even in Pampanga, the province the restaurant owners hail from. But we give them credit for their success. They being locals from Pampanga know better than most Fil Ams who open Filipino restaurants in the US with 90% of the food not so authentic.

Its so disappointing to change the plating (im not sure of the spelling) for italianos just to love our food. why cant we just let them try and be open minded how filipino really serve in the kitchen. if they dont like it ok. if they like it then great. let them accept what filipino food is. Filipino must love our filipino food first no matter how it looks or how it taste. for foriegners. who cares? Its our cuisine its part of our culture and it defines us.

I'm Filipino, and ill tell you right now, Filipino food is the most disgusting, foul-smelling, unhealthy cuisine there is. whenever I have to visit the Philippines, I legit feel healthier eating at damn Mcdonalds versus eating their fried oily crap they have.

I was in Rome. I was eating pasta for 3 daya. They had tons of restaurants but served pretty much the same thing. I was craving for rice. I asked the hotel concierge if there are any Chinese restaurants. The concierge looked really indignant and said no. LOL! I am Filipino, and would have gone here in a second had I known there is a nice Filipino restaurant there. Maybe next time.

I know many folks think that the souring ingredient for sinigan is only tamarind (added with the pre-bought signigan stock powder) but traditionally its souring is from leaves of a native tree grown in the Philippines called kalibangbang, many of the native tribes still use it. its got a natural acidic/ citric almost vinegar taste.

As someone from Negros, it really gets my feathers ruffled when I hear that Pampanga is the culinary center of the Philippines. I don't care if it's the truth (c'mon, even the most vehement detractors would agree that Pampanga is in the top three culinary hubs of the Philippines, if not number one) but provincial pride trumps reality
