Looking forward to hearing more about what Chef Aoi gets up to down the road. Also, props to the host for really letting Aois voice come through rather than trying to drive it. Will say, separately, found myself wanting a praline dust or brittle/shard garnish for contrast, though maybe thats gilding the lily.

I find it interesting how the fact Japanese people adapt to where they are located. Most Japanese restaurants (from what I have seen) in the West adapt their menu to the availability of local product resulting in the varieties of menus that is a mixed concept of both their traditional food and locale influence.

Chef is throwing me off, she says Japanese names and sounds SUPER Japanese, then switches to saying French with a French accent, then finish it off with a Brit accent. Well, just pick one already!

Honest to god I think the final touch would be to slice the single mochi down the middle. Two half moons. Offset the two on the serving plate so the guest can see the inside.

Would've been nice to have an actual recipe for this, especially for the mochi. I have yet to find a modern recipe for mochi that actually turns out like dough.

I don't know why, but she looks like an anime character lol. Not just because she's asian, but like her hair and stuff. And she's got a badass tattoo on her hand
