Quick note: satay is nothing like suya. Suya dates back to hundreds of years, precolonial times, and is the preserve of the Hausa-Fulani who are of mixed black Chadic/North African heritage as a way to preserve meat in hot deserts. Suya is seasoned with native peppercorns, seasonings and spices and native groundnuts (kuli-kuli) which all makes Yaji. Dont insult my ancestors whove been eating this for centuries. Satay is recently Indosphere inspired and is sweeter than suya. If anything, its more Indochinese.

Suya is such a cool spice! I was recently introduced to it by a Nigerian friend of mine, and I was able to make their recipe for the spice rub at home!

The recipe very similar to Satay or Sate from many SEA countries (Indonesia, Singapore, Thailand. what's missing is the soy sauces (sweet or not)
