At Austins Interstellar BBQ, pitmaster John Bates and his right-hand man, Warren McDonald, a. k. a War Dog, put a spin on classic Texas fare. Using all of the kitchen skills and attention to detail he learned as a chef in high end restaurants, Bates plays up traditional ribs by rubbing them with a mole seasoning, serving them with a riff on mole sauce and cotija cheese, and makes other distinct offerings like pastrami beef ribs and jalapeo popper-stuffed sausages

WHERE ARE THE HAIR AND BEARD NETS? HANDLING THE MEAT W/O GLOVES? C'MON, PEEPS! EVEN BEFORE C19 CAME ALONG. MIGHT I RESPECTFULLY SUGGEST A REFRESHER ON THE FOOD-HANDLERS' PERMIT? HOW MANY OF THEIR BROILED HAIRS DO PEOPLE EAT ON A DAILY BASIS? SHOWS TO GO YOU (yes, that is grammatically incorrect) that if you don't see what's going on in the kitchen, aka clearly visible, I'm not eating anything on the menu. EVER!

as much as i hate cities i definitely cant deny that theyre the place to go to find these amazing restaurants, however, i live in scumville tourist trap central florida and other than a couple nice bbq and hole in the wall places that i love i really cant seem to find any of the crazy good places like the one in this video. if anyone knows any places like this in central florida i would love to know.

Ive eaten here and it was solid. I have it in my top 5 for Austin and I was slightly disappointed the first time only due to it being so new so Im guessing they were figuring things out. However, I have seen in this video that they changed a bunch and even added stuff. Theyre not kidding about the sides or desserts here at all. The sides here are very good.

Warren G & the Regulator. A Classic right there. Shoutout to War Dog, he is very much a essential part of the whole process. Another shoutout to the people here that know about the Regulator that Wareen G put out in the 90s.

Man this is the dream. I work in a Midwestern French inspired fine dining farm to table restaurant and have been smoking/BBQing since I was a teen. The way this restaurant cooks and plates is an inspiration.

Here in the UK, our bbq consists of burnt sausages and over done burgers in the garden. We just get drunk and forget what were eating. This stuff in America is different level. Amazing xxx

They must of anticipated this cause you can't order online right now. Super stoked they are not downtown. Next time I am on 620 around lunch time I definitely going to try this place.

I had Pastrami for the first time ever this year. It tasted like vomit. I don't mean to be harsh, neither do I think I'm over reacting. But it was absolutely foul stuff!
