Im all for eating healthier versions of classic recipes, but not if the food doesnt taste as good as the original. Thats not an issue here, as these amazing, gluten-free almond meal pancakes are as delicious, as they are fast and easy to make. sunspot42: I made almond flour pancakes for the first time in awhile this past weekend - I have to watch my intake of oxalates or I get kidney stones, and like spinach almonds are high in oxalates. My recipe typically calls for milk or water in addition to the eggs, and I use a splash walnut oil instead of olive oil. I add a bit of allulose for sweetness, and this weekend I substituted some leftover Asti Spumante from New Year's eve for the water. Amazing Did something to the texture that made the pancakes much more wheat-like and added a subtle, delicious flavor. They also puffed up beautifully but stayed cohesive - I've made fluffy almond flour pancakes before but they practically disintegrated. These almost behaved like they had gluten holding them together. If you really want to cut down on carbs there's a maple syrup substitute made with xylitol from Nature's Hollow (but keep it away from pets - xylitol is harmless to humans but deadly to dogs. Another company has started making an allulose-based syrup, which might be safer if you have pets in the home based on what I could find in a brief Google search. You could also make your own cinnamon or other flavored syrup using allulose or other sugar substitutes like Truvia. Avoid sugar substitutes like agave syrup or maltitol that the body can actually metabolize - you might as well just use maple syrup or table sugar.

I am still waiting for my egg white puffs with vanilla sauce. You know the stiff egg whites cooked like dumplings in the milk later used to make the vanilla sauce. That is one desert that has not made it into the many things you cooked over the years and I personally think it should It is so simple to make too, separate 3 eggs, beat the egg whites stiff add about a well packed once of powder sugar and drop them by the spoonful into slowly shimmering milk, turn them half way thru and then take em out and either put them in the fridge to make a cold desert or keep them warm and make the vanilla sauce out of the egg yolks, beaten with 2 1/2 or 2/3 oz sugar and vanilla, lemon zest and about 1/2 oz corn starch and pour that into the milk and let it cook a bit to thicken up. Then if you like it warm, eat it right away over the egg white dumplings or let it also cool and eat it cold from the fridge. I tell you, you have not lived until you had Schneebaelle. Translated into snow balls.

Chief John I have watched your videos for years and love your presentation and recipes. This is a good almond meal pancake but I would like to let you know that this is NOT a keto recipe. Several of the ingredients are not allowed on keto due to their high sugar/ fructose content. Specifically, maple syrup is differently not a keto ingredient and you use a fair amount in your batter and then again as a syrup on top of the pan cakes. Lastly, blueberries in moderation are allowed on keto but tangerines are not because they have high fructose content. Your recipe is gluten free but not keto - I am a diabetic on keto diet and the two ingredients I have mentioned would cause a huge increase in my blood sugar and make me very ill. Just wanted to let you know. To make this into a keo recipe sub the maple syrup with a sweetener substitute - I use a monk fruit ethereal blend, and do not add the tangerines - maybe a couple raspberries instead.

To everyone who may not already know, and want to make this for a keto diet Please look into finding a sugar free maple flavored syrup/ sugar free pancake syrup Regular maple syrup is very high in carbs, and while some of you may be able to fit that in their macros- its much more keto friendly to look into a sugar free syrup to substitute. As for the fruit, as its more of a topping, I dont think its mandatory. But if you want fruit, look into low carb/high fiber berries to pair with your pancakes. Such as: strawberries, blackberries, blueberries, raspberries, to name a fewEven for those fruits, carbs add up. But, as long as you dont eat several servings, their carbs are much more manageable and easier to fit in your macros.

John I'm very sorry to say - these are not keto pancakes. Yes they are gluten free but. Could you please change the title and if you want to make keto items you will need to substitute the sweetener maple syrup with a natural sweetener like stevia or xylito or erythritolAlso - when I went into your nutritional information regarding the pancakes, the carbohydrate levels you give a reading of 28 g of carbs This is not keto friendly. They would need to be within the vicinity of 5 g of carbs or maybe at most 7 but not anything over that.

Hey chef john I've been watching your videos for a while now, but lately I've gone vegetarian. I still love watching your videos and coming up with substitutes for the meat in certain recipes, but I would love to hear your feedback and opinion on different methods of making different plant-based Meats There's a whole world of alternative meat out there, and even though I've been cooking nearly my whole life it's certainly a new challenge.

I can appreciate the effort this took to figure out - baking for low carb in general pretty much takes re-learning almost. everything. I had these pancakes at a certain True Blue breakfast restaurant in San Francisco and they botched it. They kept cooking it more til it was burnt and still goopy inside. They took it off the menu cause they couldn't figure it out.

Chef John I love you, but you forgot to caveat that SYRUP is not allowed on keto, the sugar would make your insulin go up, throw you out of keto. love the recipe and cant wait to try it. Hope you add more GOOD tasting Keto recipes because there are some realllllllllly yukky ones out there. Happy New Year

These look good. and pretty easy to make as well. I'll bet with a bit of coconut flour added more for flavour than anything else these would taste really nice. Hubby makes the pancakes in our house and loves to add a bit of amaretto to them for flavour. He could have that flavour without it this way. :)

Chef John, Great recipe. I look forward totrying it probablythis weekend. The title is a little misleading. These are not keto. To be fully keto the syrup needs to be sugar free and you probably want to exchange the out the tangerines for a less sugary fruit maybe some raspberries.
