My biggest issue with a French omelette is the folding. I can never get it to fold in one piece. That's important, especially if you're doing one for her the morning after. And I've used many different kinds of spatula. But the texture is good, and its now my favorite way to cook eggs.

Very nice recipe chef john, i make them tat way sometimes, & i know you won't be disgraced by me saying your omelet fits in with the 2 french style omelets made by the great french chef Jacques Pepin', he is a legend, & this was a compliment.

Three egg scrambled omelette, or 3 egg omelettey looking thing as I call it, with fresh biscuits and orange marmalade has been my go to breakfast ( and sometimes dinner) for a long time. Seeing Chef John making one so similar feels good.
