This seaons combinations is the same of a Italian pasta dish that I try to make other day! Which I also add pan fryed brocolli. I didn't have anchovies, used anchovies extract, didn't give the umami kick. I think that sundries / roasted / coocked tomatoes will go great with this dish what is the only element missing from the other pasta dish.

Once in a while Chef John does a video like this--something that's not common, and he makes you want to run out to the store and buy some NOW. Then you get to the store and realize that they don't carry it.

I miss Romanesco! Used to pick up a few fractal heads at my local farmer's market until I moved away. Hoping to get some again in the coming years because it's a very fun Alien Veggie. Thanks John!

I've heard a few people say not to salt veggies before roasting, as it draws liquid out of them, which impedes browning. So definitely salt after, if needed.

I think a great series would be how to cook strange and seldom used vegetables. I do pass over vegetables I have no idea how to use

My niece, who is the pickiest eater, always ask's why my broccoli is so good. Will never tell her that anchovy is the reason. Hahaha
