I m not exactly sure how this simple egg salad sandwich went from humble Japanese convenience store snack to international sensation, but what s even more surprising is that I decided to do a video for it. I m not a fan of egg salad. Until now. crawf668: I had a fear of boiled eggs for a time. My Mom made me one, it was not quite done so she finished it off in the microwave and served it to me. As soon as I touched it with my fork there was a loud explosion and egg was everywhere! I always refer to that day as the day my Mother tried to assassinate me. True story.

To us Brits, Japanese mayonnaise/Kewpie is essentially Salad Cream, and Salad Cream is nothing special(it actually predates Japanese mayo/Kewpie by quite some time. So I don't get the hype around Japanese mayo/Kewpie, it's basically as noted Salad Cream yet the world doesn't go crazy for Salad Cream. I guess Japanese food has better marketing than British food. But if you're in the UK and can't get Japanese mayonnaise/Kewpie etc just use Salad Cream.

From a mom who just finished making egg salad: steam eggs for 6 minutes in an electric pressure cooker, leave it for 6 more minutes then place in ice water until ready to peel. Even fresh from the coop eggs. Use a deep high side bowl and chop with a pastry cutter. Not the wire kind, the stiff hefty kind.

Your video of tamago sando definitely sparked a lot of joy! For the extra Japanese-style plating, I'd recommend a tiny sprig or two of curly parsley (never, and I say never, the flat-leaf kind) with one teeny tiny cherry tomato (we sometimes refer to them as puchi tomato, as in, petite tomato)

is this not a long way of making scrambled eggs? it to my autist brain (yes I am autistic) it seems transferrable? The mayo however, that's what i've been looking for. In any case, i like to try this and Chef john vocal is nice. Thank you again Chef John.

This looks good, but can someone please explain how this is different from regular egg salad? This pretty much looks like what I've been making for most of my life, except that I use Miracle Whip instead of mayo with stuff added to it.

Chef John. did anyone ever tell you. YOU USE A LOT! of salt in everything you make. My doctor tells me to cut out as much salt as possible. Did you ever cook anything while trying to cut back on salt?

egg salad is one of those things where when it's made right it's amazing and you don't wanna eat anything else. and when it isn't it just tastes bland and meh. looking forward to trying this myself

MSG is so incredibly bad for you, especially if you have rheumatoid arthritis. It'll cause terrible flare ups. A lot of people are just straight out allergic too and dont even know it.

I use kewpie often and have made a few egg sandwiches with it, however EVEN BETTER is a 50/50 mix of Heinz salad cream and ordinary mayo mixed into the egg. It's beyond heaven!
