
German Tater Tot Potato Salad

So, I come from a family whose heritage goes way back on both sides to Deutschland. My mother made the best German potato salad I ever tasted. Yes, she used boiled potatoes and a hot bacon dressing that included brown and white sugar, water, salt and pepper, and of course, apple cider vinegar. But she added some flour to the pan with the bacon, grease, and onions (although I recall the onions being raw and layered with the potatoes, so the dressing was plentiful and creamy. We had so much of it, it soaked into all the hot potato slices and made a wonderful dish of comfort food. This, on the other hand, while probably tasting pretty good (except why the greens stuff, this recipe just isn't mom's German Potato Salad which she learned to make from her mother who learned it from her mother, and on through the lineage of great German mothers!
Also, when you are pouring that vinegar into the hot pan, keep your face away, or else you've got a super recipe for cleaning out your sinuses!

I'm 65. My Granny was German (still spoke it mostly) and I have her German potato salad recipe that Mom wrote down for me. Your hot bacon dressing is very close to hers. She also added 2 T. flour, 1 T. prepared mustard, and a pinch of curry powder (maybe not German, but it's REALLY GOOD) I've been making her German potato salad for 45 years and it gets rave reviews. I will DEFINITELY try your take on tater tots! I love the things!

i love potato salad and variations like vinegar and oil or pure with majo but this is not near anything i ever tasted in germany. ill give it a try and report

In the 41 years, that I am forced to roam this human realm, I've never seen or heard of this dish in germany. But for sure this is something, that most people would love around here.
Edit: Btw I am not upset at all and noone in his right mind would be. I mean, who the hell cares whether this is german, american, chinese or from the moon. As long as it's delicious.

my great grandaddy was german, and I am not offended by this in the slightest. haha, but I would make a Northern European Garbage Plate, in honor of this show, but do it americanized, and german tater tot salad would be the star of the show. so far. unless lutefisk coleslaw makes a comeback

Crispy potatoes soaked in bacon grease? Chef John wants to credit Germans with that genius inspiration, and he thinks we'll be upset? Bwahahaha! Yeah, I'm sure I'll be weeping salty tears at the insult as I'm scarfing this down and introducing all my friends to this great German cooking.

This is close to a old recipe done over 50 years ago by my parents and one of them is Dutch German descendant. It was a cheap Sunday meal for us. The difference are Brown sugar instead of regular sugar and white/rice vinegar instead of apple cider vinegar.

Protip: if you are in a hurry and don't have time for all that fresh herb stuff, use an envelope of generic herb dressing (the powdered one. Be careful with the vinegar you add later because the dressing usually already contains acidity.

Hi Chef John! A few months ago I gave up heavy carbs like potatoes, pasta, bread, sweets etc. I've lost 20 pounds in about 4 months! Every couple of weeks I eat something yummy and sinful (to my current diet) My next cheat will this THIS!
