Learn how to make Cantaloupe Cayenne Sorbet Oriandu: Pure alcohol doesn't freeze at the same temperature of water, most alcoholic beverages, vodka included, don't freeze until well below the freezing point of water. As a result a few tablespoons mixed into any kind of ice cream, gelato, sorbet, or sherbet mix will have a smoother texture due to the alcohol keeping it from freezing entirely. A single tablespoon in a batch of homemade custard based ice cream will give it a dreamy smooth texture. It's not so much an Alton Brown trick as it is basic chemistry.

HAHA well, that is a lot of sugar. And It's ok. I have had no sugar added sorbets and fruit ices and the classic hot maple syrup on packed snow, and honestly, I'd rather plan an indulgence moment in my day for this. And gosh, the very notion of cayenne on melon. makes me want to go cut up my mango and try it with that

What a weird coincidence: I just happened to have watched a Good Eats episode today for the first time in a long while, and it was an episode where Alton Brown made a cantaloupe sorbet as well It must be good if my two favorite chefs are doing it.

Me when reading the title: I knew it I knew Chef John would find a way to put cayenne in dessertsEdit: I just remembered that your wife's chocolate cookies have cayenne as well. They are awesome. I might just give this a try, minus the vodka.

Can I substitute the sugar for a cantaloupe, since cantaloupes have much better raw sources of vegan sugar, and can i substitute the cantaloupe for sugar, because I dont have another cantaoupe?

Okay, okay, okay, okay. Cayenne is a great spice but in everything? I also can't stand Oreo cookies. They are a disgusting mix of lardy tasting sugar creme and chemical chocolate cookie.

I wonder if this would be good with mango instead? I really don't like cantaloupe, and I know mango and cayenne can be very tasty. though would I have to change the amount of sugar?

I've been searching your videos for a watermelon sorbet to no avail. Is there a way I could substitute watermelon or could you do a video with it next? I love watching your work

Hi Chef John, please give measurement in metric as well for your fellow non-americans viewers. I have to google each time how much is 1. 5 lbs (680. 38 grams. Thanks
