But if you are averse to cellulose, you may want to avoid eating that corn. Celluose is the main component of the bran (outer coating) of the corn (which is why us humans don't digest it. And by the same token, that corn meal is riddled with cellulose. Cellulose is one of the most common molecules found in all plants and is also an insoluble fiber, which aids in digestion. Don't be scared of something just because you don't understand what it is.

Speaking about sausage Chef John, do you know how to make Cevapcici? I wonder if you can do a video on making it. I like to frequent different delis and try things every now and then. Once I brought home some of this Cevapcici that was made fresh that day. So I cooked it up with some eggs and enjoyed it immensely. Now I don't eat sausages very often. Most of the time I don't like the spices in them or I don't like casings. So Cevapcici is just perfect for me ya know, freshly made skinless sausage. YUM.

So being lazy and not having all you ingredients I used two boxes of Jiffy corn bread mix 3 medium eggs, 2/3 cup buttermilk, 1 1/2 slices diced red onion, did use hot italian sausage as love it - diced cubilita's - 2/3 cup creamed corn (half a can) added a 1/2 tsp baking soda to the mix as well to be light and fluffy - turned out great Thanks for putting this up and suggesting changes you'd make.

I don't think it's the spicy sausage that was the mistake, it's the kind of spicy sausage. I would have gone with something like a chorizo (one with a hint of cinamon and spice) which would have complimented the sweetness of the corn nicely. Also why drain all that fat from the pan if you're just gonna add butter? Way more flavor in those pan drippings. Otherwise good recipe, gonna have to give it a go.

I made these yesterday. The muffin itself is nothing special so I cut it in half and added a poached egg and topped it with maple syrup. Threw on some green onions for garnish and a flavorful crunch and man was that tasty. I used jimmy dean sausage. If you want to eat the muffin alone I would highly recommend using maple flavored jimmy dean sausage, adding more cheese, and LEAVE THE FAT IN

That is essentially my old fashioned tried and true cornbread recipe, with the added sausage, corn, and cheddar, and it's brilliant I do agree that the spiciness of the Italian sausage would overwhelm them. I'll try a batch with regular breakfast sausage, which of course will allow me to shamelessly toss in the dash of cayenne.

i'm a little embarrassed. when he said usually we'd add cayenne, but because the sausage is so spicy you don't need any. so. let's add a little anyways i let out such a buffoon laugh. just a one syllable hughhhnnnnn it kinda sounded like zangief from street fighter 2. chef john's dad jokes are kryptonite.

This was excellent, as usual. JOHN, I do have a food wish: Dan Bing. Nothing I can find online is very close to what I had in Taiwan. Every variation that I've discovered is more of a crepe, where as what I had was more of a dough. Would you consider helping a brother out? Thank you.

I figured out the sausage comment in the beginning. I know people who make sausage gravy and biscuits with Italian sausage and it's just not the same. It's ok, but doesn't have the old fashioned country taste. I'm all about adding extra spices but for me Italian doesn't work.

Chef you are your own BEST critique. It takes a big and confident person to admit something could use a tweak now and again. I WILL try this recipe with a sweet Italian sausage. The fresh corn nibblets are also a definite for me. Many thanks. These muffins look terrific
