As a diver in the Pacific Northwest I never harvest octopus anymore, they are so intelligent I have a hard time killing them. They decorate their homes with shiny things they find and exhibit so many more intelligent behaviors its crazy. I do buy it frozen because its delicious but I cant bring myself to kill one. I have a four year old hen I bought as a chick to harvest for food when she quits laying, shes my best bud and one of the coolest pets Ive ever had. I built her a heated high rise coop but if it gets stormy and she gets scared she will knock on the back door and she sleeps in my room in a crate. She is the sweetness. Sometimes I hate eating animals but they are so damn tasty.

John, I'm a fan of all your recipe techniques. However, I'm a little hesitant not using the submerged in water technique. That said, the result looked great. Again, with another reservation. That is, removing what you call that slimy purple skin is not what the european chefs would do. And I'm surprised at your squeamishness. My other pet peeve in listening to you is your overuse of the filler, I'm going to go ahead and before you proceed to the next step for no apparent reason. But keep up the great work. You're my favorite You Tube watch.

Im always a bit skittish about octopus. As an American its certainly not something most of us grew up eating even those of us that lived on the coasts. But this looks so good. I really want to try it. I may have to wait until my wife and daughter are gone for the weekend. Hes right. Its the suction cups. They kind of freak us out.

octopussys are fascinating creatures and way to smart to be found on my plate. not to mention the flavor is pretty much only what you give it. use extra firm tofu shaped like a tentacle. I bet lots of people would not know the difference. especially after the panini press.

One school of thought thinks octopus are sentient creatures. Very smart and curious they seem self-aware. To be sure, In my youth I've eaten my fill. With age comes wisdom (hopefully, so I've chosen to err on the side of life. Your thoughts Chef?

Dammit Chef, you've made me update my pots and pans and purchase a pestle, food processor and real knives. Then a fortune on rehabbing the spice cabinet. Now I have to track down how to find a freaking frozen octopus. Grrr.

this is the way to tenderize octopus. braise on a bed of vegetables until tender. I do mine in the oven to keep the range free, but by all means use the range if you'd like. people please listen to this guy
