OMG Chef John! I finally found something to disagree on. I'm a master of grilled cheese, and I always use either potato or butter bread. Murican cheese is pretty much a staple here, but other cheeses are totally acceptable. Chedder + Murican is wonderful. Aside from that, great video as always. And as always, enjoy!

I've never had anything from Popeye's (I'm not even sure they exist in Canada, but I can tell you from cooking at home that corn flakes in a coating mix will give it a sweetish taste. They may be using panko, but that sounds a bit posh for fast food.
