Remember that famous line in that movie where the scientist says, your chefs were so preoccupied with whether or not they could create Spicy Caramel Chicken Rice Krispies Treats, they didn't stop to think if they should. Okay, I might be paraphrasing, but I couldn t help think of that while filming this highly unusual, but rather enjoyable sweet/savory monstrosity

I would have used coarsely minced chicken, and I would have not used the marshmallows. I would have used glucose syrup, or I think it is rice syrup instead. The stuff you get at the Korean or Thai market, I forget which right now. Maangchi showed how to make it once. Anyway, I would have used that, as it is less sweet and has better holding power than marshmallows. Or dispense with the chicken and chilis in favor of ground chilis and chicken base. That would just leave the problem of the moisture from the stir-fried part, which is why your rice krispies got weird. Maybe try just plain puffed rice from an Indian market.

I would have done this differently:
I would marinade my chicken in buttermilk. Then throw my chicken in the rice crispys so that they stick to the chicken.
Then I would fry the chicken. then put my chicken in the oven for about 7 minutes to finish cooking the chicken.
In a pan I would add all the other ingredients (except the marchmallow. I would add my chicken to that sauce at the last minute.
I would accompany this meal with a marshmallow brownie for desert.
I really don't care if this is not a rice crispy square. It is the same ingredients.

This will be your legacy Chef Snap, Crackle and Pop that said, after the initial cook of the chicken, an option might be to put chicken in mixer bowl with paddle attachment and shred the meat, return it to the skillet for the caramelization process. This could possibly help the final treats hold together better along with more reduction of butter mixture. The chunks of chicken seem to be the culprit of the treats not holding together.

The recipe would work if you decreased the marshmallows, increased the caramel, chili and green onion syrup, then mixed that into the rice krispies. You'd then cool it for several hours. In the meantime, you could thinly slice the chicken, chill it and serve that over the rice krispie squares. You'd also need to have your guests get extraordinarily high before service.

I wonder if this might actually work better if the chicken is sliced a lot thinner. Or maybe even chopped up with a cleaver.
Maybe some other binder other than marshmallows could be used? Or like make marshmallows except without the sugar? Gelatin and egg whites?
I think there's an idea here but whether it's even worth it is questionable

think maybe id try to use plain crushed rice krispies as a panko replacement or try to use it to make a batter and deep fry it an make some kinda sweet and sour/spicy rice krispy chicken (or what ever flavor combo youd rather have) instead of trying the full square pan. but still understandably someone had to give the pan idea a try first xD

The thing that seems really out in this are the marshmallows, especially if they are the commercial ones. Maybe one with less sugar would be better or using something else as a binder. I know they're supposed to be treats but obviously that didn't work out so maybe making them more of a main dish would work better.

I could see reworking this by using coarsely crushed puffed rice as a breading to some boneless chicken thighs and topping it with a spicy caramel sauce.
If you're dead-set on the has to look like rice krispies treats idea maybe using ground chicken formed into square patties and breaded.

Major points for creativity! I too occasionally get some criticism for my experiments in the kitchen although my failures look much, much worse.
The dish looks good enough to try. If you refrigerated it & served cold it would set. Cold, bbq chicken tastes just fine, this might too.

Tbh though, there could be something to this. Replace the marshmallows with 1 cup peanut butter + half cup dark corn syrup to cut that overpowering sweetness down, throw in some thai chilies to amp the heat up and you can probably get close to a kung pao chicken sort of side dish.

I love your style. All other chefs never, reveal and promote their failures or mistakes. I think it s wonderful to know that we all make mistakes. You encourage us to continue on and try other avenues to turn the mistake around. Bravo. And no, I will never try this.

I think I would just make the caramel chicken part and eat it with either plain rice or vegetable fried rice on the side.
I like Rice Krispies treats but I m kind of a purist about them. I wouldn t really care for chunks of chicken in the middle of them.

This is unequivocally the ABSOLUTE dumbest recipes you've tried (she says with affection.
And I do think you were drunk or high. And drunk would be my second choice.

If it's too sweet, do you have any thoughts on trying to use pure gellatin, chicken stock & sesame oil instead of marshmallows? Also, maybe if we cut the chicken smaller it would adhere together more easily? Thank you chef!
