Wow, things just came full circle my dad, who ran a bakery and cafe in the north of England beginning right after WW2, used to use exactly this technique on various cuts of pork (which would then appear on the menu as cutlets.
Though they'd be plated with mashed potatoes (or bashed neeps) a veg, and gravy with nary a salad green in sight
I ate tons of these things as a kid. Loved them.

Save tomatoes for seeds? You just remove seeds and dry them.
Before sowing, rub the seeds with sand to remove the water proofing which takes time to break down in the earth. Otherwise expect a few more weeks before the seeds germinate.
