It s a cold, wet night, and you didn t have the best day at work. You were just going to heat up a can of soup, which might make you feel a little better, but why not go for a full mood makeover, and steam some very comforting, easy cheese dumplings on top? Gene: At first I thought it was odd that Chef John s last three entree videos were all soups or stews, but CJ does nothing by accident. He s getting a head start on the deluge of internet searches for cold weather recipes come October and November before the onslaught of holiday cooking takes over. He knows the yearly cadence to maximize his hits!

I normally just wing it and it comes out different every time This is how food tastes best (except baked goods. When recipes are followed too close on great dishes it creates an over sterilized pallet that over time becomes bland. Slight variations keep a dish exciting.

Made your stuffed zucchinis twice already and its always a big hit. Will be trying this one next! Might use goat's cheese though, since thats a little easier to get around here. But hey, it's flour and cheese, so I'm sure it will still be delicious.

Farmers cheese dumplings are part of Hungarian cuisine. They are often served as dessert. Make them with some sugar in the mix and preferably vanilla sugar, and sprinkle with sugar and cinnamon before eating.

My brother & sister-in-law make Lithuanian style farmer's cheese; which is a lot drier than the style you've used. I'm going to have to experiment with adding some cream cheese or even sour cream to it in order to make these dumplings.

I've always made my dumplings with flour with a little cold butter cut in and milk. (Biscuit dough, basically. I've never tried farmer's cheese but will try getting some next time. I wonder if ricotta would work?

Say Chef John, why is it that folks almost always feel the need to spell out the word roux just after they say it? I have not noticed this phenomenon with any other word. Not even with the word, choux.

Other than sauteing the carrots and celery with the onions, this is kind of how I make my chicken and dumplings. I also use shredded cheddar or pepper jack in the dumplings.

It's still crazy to think that Chef John has been doing this for 15 years. It's a miracle that he's still making videos. I hope he continues for another 15!

Something very much like these dumplings is pretty commonly eaten in parts of austria, but usually in a clear beef bouillon rather than chicken stew.

I made a chicken stew with dumplings like these this past week. No cheese, though. Used up the rotisserie chicken, though.
