Everyone loves hummus, but hummus doesn t love everyone back. So, if you re someone who has trouble digesting legumes, this very light, very tasty, and very easy to make, hummus, is for you. Kathleen: I love zucchini and I also love hummus, but when I make it I don't put in the tahini as I hate sesame seeds. I'll use Chickpeas and throw in a little anchovy for flavor. I'm going to try this zucchini version with the anchovy for flavor as well. Thanks Chef John.

Ha! I just made something like this yesterday before your video. I was trying for a Baba Ganoush without the eggplant. I didn t bother to salt or cube the zucchini, just cut off the ends and let it get nicely charred in the oven. Then split them and let them drain in a colander. It is great. Might add roasted garlic next time to deepen the flavors.

I feel attacked. Who doesn't like zucchini? Maybe my family is weird, but zucchini was always a staple in our kitchen. Deep fried zucchini sticks, zucchini bread, roasted, spiralled, etc. I'm definitely giving this dish a shot, looks delicious.

So this is just zucchini baba ganoush. I mean zucchini and eggplant are almost interchangeable but it s in no way a hummus. Just make it out eggplant like it should be rather than inventing food to anger the culinary gods.

Some taquerias use that Mexican squash to make fake guacamole. I'm made it and can't say it tastes like guac. However, I wonder if the salting and draining method would alter the flavor. I'll give it another go and see.

4: 01 or grilled courgettes as we call them in Britain (or the UK. England is part of the UK and not the name of the island of Great Britain which, along with Northern Ireland, makes up the United Kingdom.

Looks and sounds great! Would it change it too much to roast the garlic? And, is there a substitute for the tahini? I love it, but some around me don't. Also, hard to find in the city/county I live in. Thanks

I am not a big fan of zucchini, but I will try this salt trick, that I I only knew for eggplants.
Furthermore, I wonder if this baked zucchini could be a good ingredient for a pesto.

Dude! Did I detect a double dip taking place at 6: 11? Tsk, tsk. Perhaps, though, you ate the whole bowl. In that case all is forgiven, and you are the Danny Thomas of your no-bean hummus.
reply

Huh, this whole time I thought there was gonna be pumpkin seeds in it. Seems like more of a riff on baba ghanoush than hummus to me. (pfff nvm you just said that lol)
reply

I've been making this (calling it zucchini baba ganousch, like you said) for years because I hardly ever buy eggplant, but always have zucchini, especially in the summer.

I recently made hummus with tomatillos and serrano peppers and it tastes exactly like guacamole. I've been calling it my avocado free guac so this vid reminded me of that.
reply

Why go to this bother when a Guacamole will do as well for a dip? Is Avocado a legume and allergenic? This reminds me of the idiotic Vegan 'burgers'.
reply

Uh. dear chef John, Hummus is the name in all Mediterranean languages for chickpeas. The dip is named after it, and it could be made without tahini.
reply

hummus without hummus. that is interesting.
in Arabic hummus means chickpeas. we use same word for both the beans and the. well. the hummus

There's something about the pigment of purple yams that only looks good when they're cooked whole. I don't like the colour of these ones

4: 00 In England, they would also not call it grilled zucchini. They would call it grilled courgette. Just like the rest of the UK.

This is not hummus. It might be very good, but come on. Come up with some other name that doesn't steal the hummus title.

Perfect timing. I've got zucchini from my garden coming out my ears! Finally something better than zucchini bread I can make.
