This is my take on cowboy caviar, which is one of the greatest, and most addictive party dips of all time! And sorry, if you were hoping for bottled Italian salad dressing, since the secret to this ultimate cowboy caviar is an easy to make, homemade version, specifically designed to pair perfectly with all the other ingredients.

3: 27 I would suggest to try black-eyed peas in some Hoppin' John as your first time trying them. I used to eat just black-eyed peas, ham and cornbread for good luck on Jan. 1st, but for many years it has swapped to Hoppin' John and I eat everything I fix. Since it focuses more on the peas and it isn't as hidden like with Cowboy Caviar. My mom has actually been wanting to find a good recipe for this since my bro always brings some Cowboy Caviar Salsa from Trader Joe's when he visits.

Chef John you rock! What a great way to eat your Fresh Vegetables! Sneak em in and call it dip. I’m sure the kids could fall for this Well if not just more for us adult children! I love your recipes. Thanks so much! I’m definitely taking this to my next barbecue as the 7 layer dip is getting old! Although I do make a version of 7 layer dip but I add cooked crumbled ground beef that I’ve seasoned with taco seasoning mix. Then with some pita bread I can call that dinner!

Shame on me - No idea there was an appropriate 'dressing'! I started with pico & added some juices as I went incl lime and YES- Fresh Corn Please! Don't skimp on the herbs. And avocado cubes laying on top- is a luxury. No One Complained! Lol- and it's gone. Add a HUGE bowl of ceviche' and your friends will be begging for the next lil' carry-in & offering to take any/all leftovers AND the recipe- ASAP.

I've been watching your videos for about 6(ish) years. When I first got my cat as a kitten, 5 1/2 years ago, we would watch you together. I recently had to say goodbye forever to him. This was the first video I've watched since then and it's been hard doing it. I just wanted to thank you for giving me so many good memories with him, while watching your videos.

I literally just bought some cowboy caviar salsa from Kroger not 2 hours ago. I had never heard of it, didn't know it was a thing, looked interesting to go with my tortilla chips, and grabbed some tomato salsa in case it sucked.
greatest, most addictive party dips of all time why have I never heard of it.

My aunt brings this to every family function and everyone loves it. We don't do it with chips, just have it as a side for burgers and dogs. I've never known the name - dishes at our get togethers are named after the people that bring them. Steve's beans, Kat's carrots, Ana's slaw etc. Now I know the name!

I don't use avocado bc their production practices aren't vegan friendly.
I'll skip the sugar or use my fruit sweetener.
I love the triple threat pepper forms!
I usually only use black eyed peas for Hoppin' John. Can't wait to try it.
Likely the healthiest snack at the party.

yay, it posted! glad all Is well and wow so colorful and delicious sounding! I love black beans but I really love black eyed peas! and given this is cowboy, I'm thinking a nice grilled cowboy steak would taste good here, too!

Wow, that looks amazing. Not sure I can get all the ingredients in Sydney, but it's worth a try. I'm keen to try this as an additional thing to add to burritos or some other wrap rather than as a dip.

I just had this for the first time on Memorial Day! My neighbor brought it to our little potluck, and I was addicted! She added avocado, though, and that took it to a new plane of perfect.

I thought it was the other cowboy caviar with the balls lol. Turns out that’s Rocky Mountain oysters. Love the brokeback mountain quote I don’t think a lot of people will get it!

I've always used the make it yourself Italian dressing, but Imma try your dressing instead. This is a family favorite, and I think this will take it to the next level! Thanks chef John!
