This Thai-inspired potato salad has to be one of the most exciting and interesting potato salads I have ever had. Chef John, thanks so much. Can’t wait to try this. I am astonished by the Rude comments. The world has gone mad. You sharing your GAzillion years of cooking is so generous, funny and useful. I should say I have cooked all over the World. Had bakeries in Argentina and Spain. Cooked for Ambassadors and taught cooking in several countries including Australia. Each time I see one of your videos I LEARN SOMETHING.

I learned about coriander while visiting South America. Makes a great seasoning for tuna fish and eggs! Love a good potato salad and can't wait to enter this colorful flavorful recipe into the rotation! And at about 4: 17 mark of the video, it sounded as if Chef said a bad word, lol. Naughty Chef! lol

Great video, Chef John! It hadn't occurred to me that you called it Corriander seed knowing you call the herb Cilantro. Of course, here in the U. K. it's all called Corriander. or that stuff that tastes like soap, if you're unfortunate to experience it that way!

Looks amazing! I seem to remember having something sorta, kinda similar when I was in Thailand myself some years back. I know I had a sort of Thai pasta salad which I was a little shocked to see but both were quite good as I remember.

This seasoning style reminds me of waterfall pork. You guys should definitely check out that recipe if you want an alternative dressing to this that is also one of my absolute favorite ways to season grilled pork.

I bet there's a scientist somewhere that knows why coriander leaves taste like soap, but the seeds taste like heaven and also, are there only two types of potato in the US

This is such a great idea. I never would’ve thought to dress potato salad with a Nam Tok sauce, but it’s such a punchy and bold sauce for the potatoes to stand up to

I generally don't like potato salad, but that's largely because in my experience it involves mayonnaise or Miracle Whip. This Thai-inspired version looks tasty.

Might an Isaan/Lao version of it swap tamarind for unripe citrus and/or dill & use padaek (a fermented fish paste) in the dressing where fish sauce would be

Great recipe Chef John. I think some chopped scrambled egg, mung bean sprouts, scallions, and maybe a little mayo for creaminess would be welcome.

What I learnt today - I mean other than the actual recipe - is the whole roasting potatoes from being actually cold, not just room temperature.

1: 10 as a european, it never clicked that in the US you still call ground coriander coriander even though you call coriander leaves cilantro

I think adding some smashed fresh pickles for a little contrast of texture would work well with the potatoes.

Genius, I live in Thailand and don't generally eat local as potatoes and bell pepper are not on the menu. Will have to try that.

There's a pemanent shortage of warm, dank water in my town, so I'm sure glad all chef John's recipes call for cold, fresh water.

No Roasted sesame oil I probably would never make this with potatoes, but I'm sure it would be good mixed with noodles.

That looks absolutely delicious. I like the tips about using cold potatoes and baking soda to help the potatoe get crispier.
