This incredible zucchini roll lasagna is baked on a turkey Bolognese, and doesn't contain any pasta. Instead, strips of zucchini are rolled around a 3-cheese filling, and you’re going to be blown away by the great texture and flavor. Plus, the presentation is a real showstopper.

I have to disagree. Lasagna is the name of the pasta. So without that pasta, it isn't a lasagna. It may be delicious, but it isn't lasagna. That's like all those companies that sell milk that doesn't come from a female mammal. These companies should not be able to legally call their product milk or meat or whatnot if it doesn't actually contain real milk or meat or whatever.
It begs the question, if vegetarians are so anti-meat, why do they call these products by the name used for meat I'd think they'd be embarrassed and offended by eating something called meat.

I believe that August 8th is National Leave Zucchini on you Neighbors' Porch day.
I haven't seen any Zucchini come in from our garden this year. Everyone is welcome to come by with Produce, if you live near the Button on the Cuff of the Mitten.
Our next-door neighbor did bring us a bag of cucumbers and early apples a couple days ago. She also seems not to have Zucchini going begging this year.

I make this vegetarian by using ricotta, frozen spinach (squeeze, piece of bread, grated, mozzarella, seasoning (garlic S, P, basil) 1 egg. Mix. Place down center of prepared lasagna noodle. Roll up. Place seam side down in 9x 13 with tomato sauce in the bottom. Top with bechamel sauce, more mozzarella. Bake.

Here in Brazil we call it Rondelli, a brazilian creation inspired by the Italian cuisine, using sliced lasagna pasta. Zucchini is usually used as an alternative for people with celiac disease or gluten intolerance (and for zucchini lovers of course. Eggplant slices is an option too.

A good one, Chef! I love the idea and recipe. I'll need to make some modifications (but you're fine with that. The only concern is that slicing those Zucchini
and rolling them with filling is a time-consuming task. So this is not something I'll do every other week.
Thanks!

That looks amazing. I’d like to include this in my potluck list of favorites but I do have a question. How far in advance can I make this before baking Also, can it stay warm in the oven for a while or will the zucchini turn to mush That’s two questions, actually.

I just had my mind blown (again) by the price of meat at the grocery store. I’m going to have to resort to only occasionally making meat dishes for dinner. Please give some tasty grain and bean recipes for us involuntary vegetarians.

Personal tip. after the meat is browned, I like to pulse it in a handheld food chopper until it's ALMOST fine, like Taco Bell meat. it incorporates really well and makes rolling up whatever vehicle you choose for your rolls.

I'm totally looking forward to the angry Italians telling us all about how wrong this is. I'm not even Italian and the fact that you're calling this lasagna with turkey Bolognese is shocking.

Wish I had seen this before going to the store just now. absolutely want to make this, I think I would enjoy this preparation more than lasagna or eggplant parm. Great idea, thanks chef!

Thank you for the low carb option. I have done this with regular lasagna noodles and have tried zucchini lasagna layered but that one is really hard to cut and enjoy. Recipe saved!

I went into this thinking, I am not a ground turkey fan but I bet he's got a trick up his sleeve. That would be the cream -- I can totally understand this working. Glad I had faith.

Coincidentally, Lidia Bastianich just posted today her recipe for Classic Bolognese Sauce - I think this will make a KILLER combo with Chef John's recipe here.

I tried doing something like this but didn't salt the zucchini like that. Mine didn't turn out so great. I'll do it your way this weekend. It looks fantastic.

Pretty funny prep work. I know Chef John has a mandoline. I guess Chef John wants to make the recipe more accessible. Recipe looks pretty good.

I just stared low carb again (6 days ago) and then I see this! You are a saint! I will make this. I have all of the ingredients.

Thinking I’m just going to layer those zucchini like they were lasagna pasta. Looked too time consuming doing that rolling.
