I’ve heard that using evaporated milk for mashed potatoes is not uncommon down south, but for much of the country this isn’t something most people have tasted, which is a shame, since it works so well, and was one of the inspirations behind these incredible Tres Leches Mashed Potatoes. That, and the catchy cake name, of course.

Oh, duh. Don't just mash potato, whip it, whip it good! There, Chef John. There are your musical cues. Seriously, I have to try that. I have a hand mixer that someone tossed out, apparently because the low speed setting is busted, but the high speed works fine. Without a mixer this would require a lot of arduous whisking and wouldn't turn out the same.

OMG YES!
my mom is a horrible cook _BUT_ she (accidentally) made great mashed potatoes: no cream, just condensed milk whole milk buttermilk --> bc they need 'room' for the butter lake

Last thanksgiving I wowed my friends with Tartiflette mashed potatoes (just mashed potatoes with bacon and some brie wheels broiled over the top, inspired by your video. Now I’m ready to upgrade the mashed potato part! I will probably substitute the buttermilk for sour cream, but evaporated milk is a genius addition.

I made this last night - WOW WOW WOW WOW WOW WOW! . Believe it or not, there was little bit leftover and I heated it up for breakfast - it was possibly even better this morning. Not usual with LEFTOVER mashed potatoes, but maybe because they had a lot of liquid and were whipped very well. HIGHLY RECOMMEND!

You are so ignorant. Salt doesn't add flavor except salt flavor. Real coo, s k own how to build amazing flavor without salt. Salt is a dangerous chemicale whe. Used in high amounts. Just like heroin. How about you drop the. Chef part you clearly are nothing more then a fool,

While trying to focus on the recipe, I can’t help but stare and wonder what that type of can opener was used to open the Evaporated Milk. Never seen one just pierce a triangle in the lid to easily pour before. Seems easier than the standard rotary opener I have.

I audibly gasped as I thought you would be adding sweetened condensed milk for half a min with that title. I went woahhh there. Thankfully it’s not.

Hate disagree with Chef John, but a ricer is by far the superior way to mash potatoes. And an electric whisk should not be anywhere near potatoes because they break down the starch too much and you end up with wallpaper paste, even with floury potatoes.

Hm. I guess I stick with my un leches recipe . replace the other two with more butter. add nutmeg. the technique is good I guess, but I use a whisk. a single pot and a lid. Why over-complicate things and create a lot of dirty dishes, you know.

Hubby once proudly presented me with a lovely creamy shrimp dish he made. one taste and omfgyup, he had used sweetened condensed instead of evaporated milk, bless his heart. (I was a trooper and gagged it down without comment)

I do a very similar technique for my mashed 'taters. But instead of 3 kinds of milk I just use half and half cream, lots of butter, and a sprinkle of garlic powder. I love them whipped and smooth like this. It's so so good!

Ohh always, always don’t forget freshly ground nutmeg in mashed potatoes- regardless the recipe. It’s mandatory. Trust me! Otherwise as Chef John said: there is no such thing as too much butter with mashed potatoes

Steam spuds for mash in a pressure cooker for better texture than boiling. If you mistakenly put sweetened condensed milk in mashed potatoes, don't despair, just look up a spudnut recipe and adapt!

speaking of inventing new recipes, although the jar looks the same and the spice looks the same, don't substitute curry powder for cinnamon in your oatmeal. It wasn't bad, but it wasn't awesome either.

A dash of mace powder in the mashies does magic. It adds just a bit of complexity to the overall flavor that's hard to pinpoint. Honestly, that's true with a lot of foods, not just taters.

My brother in law is kind of famous for this Queso dip. Once he mistakenly used sweetened condensed milk instead of his usual evaporated milk. Yeah. A new recipe no one wanted.

Really enjoyed that I remember using an electric mixer to mix potatoes, butter, and milk when I was young. I now use a KitchenAid. And I love your voice n the way you talk!

So glad to see a chef that remembers whipped potatoes! We always give our potatoes a quick spin with the handmixer because we absolutely love the texture it creates!

Do you think it'd be possible to bake this in small ramekins I'm very fond of double baked potatoes, but unsure how that'd work with the milks that are used in this.
