Hey, Chef John. Since you're wading into the world of fusion turkeys, I wanna tell you about a local Indian spot I tried years ago. They had a tandoori turkey. I got it for Thanksgiving. Kind of interesting, but I think you might be able to do it better. Would love to see your take on it!

Looks interesting, but I don't really care much at all for turkey. I do it once a year out of tradition, but always found it to be just too dry.
