These za'atar chicken wings are gorgeous, fragrant, savory, and citrusy. The big, bold flavors are best served with tahini dipping sauce or any yogurt-based sauce. I recommend you make a double or triple batch of za’atar, because you will want to season just about everything with za’atar once you’ve tasted it.

note: Za'atar is an herb AND a spice blend which contains that herb, it's a relative of Oregano but not generally available in stores(I have to specialty grow it guests have never heard of it. So this isn't Za'atar but it does resemble the spice blend close enough to still be good. The closest ingredient in this mix is Marjoram as it's also part of the Origanum genus.

Za'tar is best enjoyed by dipping pieces of fresh crusty bread in good olive oil then doing it in za'tar. Bonus points if you follow that with a bite of salty cheese and a wedge of cut up fresh tomato. Like the classic saying goes there's a party in your mouth and everyone's invited

Zaatar is on my short list of mandatory spices. I use it and garlic salt to turn five dollar one star frozen pizzas into five dollar twenty cent three star frozen pizzas on Board Game Night.
Goes well on nearly anything with butter or olive oil as a significant ingredient.

Oh that's great, after seeing this recipe I looked it up and it seems I can also use Mountain savory/Winter savory which is a very popular herb in my country to make the spice mix. I've wanted to make a cool new spice blend with it so I am excited to try it out.

Zaatar goes on a lot of stuff. cream cheese, pizza, yogurt, bagels
3: 17 spices in a bowl look so pretty, like paints on a painters palette
7: 43 holey moley, you serve that for a football game, that dish is clean before the first quarter

I presume that you can’t fry the wings with these herbs They would probably either be ruined or just come off in the oil I suppose I wonder if a recipe could be adapted where this is a sauce to baste the chicken with after cooking

Chef John is my fav chef and I have learned so much about cooking. And one thing I’ve learned, every dish has to get a sprinkle of some sort of green stuff. Chive, green onions or parsley. EVERY DISH even chicken wings.

Ironically, the zionist regime banned Palestinians from planting and harvesting zaatar (the actual herb used to make this blend) only to culturally appropriate it later and claim it their own, just like everything Palestinian.

Thank you for posting this great recipe. I was always wondering whether Za'atar can be used as a spice. I used to toast bread then pour some olive oil on it, salt, za'atar and lemon juice. Wonderful.

needed the salt ratio- thanks! These look really good- will have to try. although that seems like a very long time to cook chicken wings. is it due to the quantity on the sheet

I've already been using sumac along with garlic powder and salt and pepper on pork chops, but I might try making some za'atar on my next batch and seeing how I like it.

Chef John's Zatar seasoning:
1. Dried thyme
2. Dried marjoram
3. Sumac
4. Toasted sesame seeds
5. Ground cumin
6. Ground black pepper
7. Cayenne

400 degrees for 20 minutes on both sides seems like quite a long time. I usually get wings completely done with 15 minutes on one side and 7-10 minutes on the other.

Keep in mind that while we enjoy our chicken with zaatar, our friends in Gazq are lucky to even enjoy zeitoun zaatar on bread infested with worms. Free Palestine
