How to Make Green Bean Mac and Cheese - Food Wishes

This green bean mac and cheese is a mashup of two favorites, green bean casserole and macaroni and cheese. Topped with crunchy French-fried onions, it is everything you could hope for. The green beans add texture, gorgeous color, and just a hint of delicious bitterness to amplify all the other flavors.

Great idea! I was 80% there this Thanksgiving. We ended up with a couple more mouths at our Thanksgiving table this year, and since those mouths belong to college-age boys who love to eat, we ended up adding mac and cheese to the menu. I happened to have shallots and some leftover sourdough, so I fried the shallots, then cut the bread up into tiny cubes (like 1/8-1/4 pieces) and fried that in the shallot oil. That topping made it go from really good mac and cheese to absolutely fabulous mac and cheese. Next time, we'll level up again by adding the green beans!

That’s the best green bean casserole ever! Normally I don’t care for green bean casserole. But I love green beans that are lightly blanched. Snd I love homemade Mac and cheese. My moms recipe is similar for her homemade Mac and cheese except she adds fresh onions but the French diluted onions would be a nice way to incorporate that part of the equation

Woah my sister and I made this a few days ago, just winging it ofc, using all the ingredients available at home (we're due for another grocery trip anyways) and it was delish hehe. What we did do differently, aside from the spices used, was that we sauteed garlic onions and shallots before adding the flour to the oil. It just adds aroma but it's worth it >w

My Grandmother was making a version of this in the 70s so it's nice to see someone else discover it. The main difference was she used crumbled Ritz or Townhouse (whatever was on sale or lying around) crackers for the topping with small knobs of butter for extra richness and artery clogging.

Personally I wouldn't call this a fusion of green bean casserole without some sort of cream of mushroom element incorporated.
Probably the best bet at introducing those flavors into this recipe would be to incorporate it into the bechamel. I might just have to try that out next year.

I've been using your Mac and Cheese recipe for a while, and I have been adding equal parts Velveeta as a melting cheese to grated cheese. I find it helps maintain the creaminess and makes the sauce smoother whereas straight sharp cheddar can get a bit gritty as it cools.

Do everything Chef has suggested. Plus add cubed
Sea Side smoked cheddar,
Coopers hill cheddar,
2yr aged Wisconsin cheddar,
A little Cream Cheese.
and a little soy sauce for umami
Add all of this to the bechmel slowly low heat a few cubes at a time.

As a greenbean casserole enjoyer, I love the ven diagram crossover with the mac n cheese southern side dish for the holidays. I plan on doing this dish BUT adding in mushrooms as well. Thanks chef john for another great recipe!

I mean, this is basically just a macaroni and cheese recipe with cut up green beans added inside it. Jean Pierre has a green bean casserole recipe that uses a mornay sauce and mushrooms and onions, but lacks the macaroni.

Good recipe, I like rigatoni in place of macaroni, also I will not eat cayenne because as much as you use chef john, I am afraid it is addictive, lol, btw adding diced ham would make it an entree instead of a side item

I guess this would work with frozen beans as well. Mac'n'Cheese is a cold season dish but then fresh green beans are not available where I live (or they come from a different continent and I'm not gonna buy those.

No, Chef John - just NO! I can pretty much eat an entire green bean casserole all by myself. but now you're throwing in my favorite pasta! I'm gonna need me some bigger pants. lol. seriously it looks scrumptious!

Would there be any good way of making this gluten free without the flour We have really nice corn based pasta but my partner needs gluten free so thickening with flour won’t work. Looks amazing though!

If you’re only cooking your green beans for 4 minutes, why bother wasting the water As a Southerner, you cook your beans a minimum of 2 hours; otherwise, just rinse them off and eat them raw.

Sometimes I wonder if Chef John's video prep is something like 60% choosing a recipe, prep, planning, cooking, filming and editing, and 40% coming up with the after all you are the X of your Y line.

I just saw a video from Fallow saying you should always warm the millk before adding it to the roux in parts. Do you know why these different techniques are both possible or whats up with it

After trying this recipe as-is, I think I might try again a week or so later but with chopped broccoli instead of green beans (being someone who enjoys the pairing of broccoli and cheese.
