Blueberries are native to North America, particularly the parts the Vikings were able to reach! It'd be a bit of an odd substitution to them since they've never had blueberries, but tasting and looking somewhat like the related cloudberries they had in Scandinavia, this could have plausibly been made!
It'd be a bit like a Dungeon Meshi meal to them, but they made breads and simple dishes scavenged from believable resources they come across

I’m 50 and I saw my first breakfast burrito when I was about 20 and still in school and I didn’t understand why everyone was making such a big deal about the groundbreaking portability of them because my as long as I can remember my mom would make breakfast using eggs bacon and cheese wrapped in Lefse whenever a sit down morning meal wasn’t possible.

I used to make flat bread. I just can't handle the gluten anymore. U. s. flour quality is just so low and disgusting! So i make spinach and eggs, or egg white wraps bread. It very simple and fast. Blend liquefy together put in low heat pan till cooked into a wrap. Im trying now to make egg white cloud bread. Which is just egg white meringue.

As a Norwegian I’m seriously confused as to what you’re making here. Flatbread in Norway is papertin and crisp. What this looks like is either what we call lefse or lompe. Lefse is usually used as you showed while lompe, which this resembles, is mostly a potato based thing used to wrap around hot dogs.

I love flatbreads. Pita, Naan, Lovage, LMB. One of the [many] great things about it is that since you cook each separately, there's no need to divide equally. Just eyeball it. It's not like buns that all need to cook at the same rate in the same oven at the same time.

Really reminds me of the cookies we would make at an iron age re-enactment museum. We would mix the honey into the dough and bake them smaller on hot pottery shards next to a fire. When spread with homemade butter it was the best thing!

i had a flatbread in sweden that was a standard lebanese flatbread with boiled sausage, mashed potatoes, salad and ketchup.
So this isn't accurate in my experience. /lh
Probably much better though.

Chef john- my wife has celiac and we often are looking for gluten free breads and things we can make gf. Any idea if I could use some rice flour or a mix of rice flours and still get this to work out

Really cool! Reminds me of lompe, the modern Norwegian version of this that use potatoes as well. Great for hotdogs, and way better than typical hotdog bread if you’re eating a quality sausage.

I remember going to a viking village theme park when I was a kid, so basically viking village LARPing. And I remember we ate some flatbreads with butter and honey. Delicious.

This exactly how Indian chapatis are made. Except we use only water or sometimes milk for very soft rotis. Oh for children we do apply sugar on top after applying ghee.

I guess it's worth asking, if we're lacking spelt and rye, can it be replaced entirely with AP flour and just use this as a technique, rather than a set recipe

It is not even remotely close to Norwegian flatbread. It was way thinner, hard and dry. It could be stored for a long time.

I made flatbread today with freshly milled einkorn. My favorite toppings are cream cheese with roasted red peppers, and cream cheese with sliced black olives.
