This incredible lasagna is made with paper-thin, homemade pasta handkerchiefs folded over a delicate three cheese filling, which is then layered with pasta sauce to create one of the best alternative versions ever. This might be my favorite cheese lasagna of all time.

The TASTING is always the best part. I love the ending. was just about to say, we want to see the middle. and yes, he passed the test. This looks terrific. Many never had a LASAGNA without the middle being hard. Then, it's so unconfortable to compliment the host. but this seems doable. CHEF JOHN KNOWS! First, the FAJITA CHEESBURGER though. xx.

It’s not the same, and probably not as good as this, but I had some leftover wonton wrappers thawed from a dumpling making extravaganza, so I used them as my lasagna noodles. They were thin and delicious, and my husband said he preferred it to regular noodles! I will give this a shot, since I think it will be well received!

I REALLY appreciate that you just cook timeless food and not give in to the zeitgeist. This is April 9, 2025 and it would have been so easy to say the real Parmigiano Regiano, while we can still afford it. it also would have been a real cheap shot at current events.

Chef, I cant make a decent bolognese style meat sauce. Its too acidic, or it tastes like nothing. If i add sugar for the acid, it makes things bland, salt doesnt help. A masterclass on bolognese style ground beef sauce would be just perfect.

Chef John, as the Chief Hankerer this yummy concoction is nothing to sneeze at. Already imagining what else to do with this with Italian, Indian, Chinese etc etc ingredients. Thanks for expanding our Ker-choos. Jacques Mexico

All good chefs share and teach what they know because they have no reason to keep it to themselves as they’re always coming up with new recipes and building off of old recipes. Cheers to this chef for being one of the good ones.

There is nothing about this that I don't love. No bechamel, no slow-cooked meat sauce. You could make this whole thing in less than an hour if you outsource the pasta, and that's awesome for people with responsibilities.

being from south asia, handkerchief pasta reminds me of rumali roti. which literally translates handkerchief-y roti (rumal=handkerchief. Why did different cultures across the globe want to eat their handkerchiefs

It’s very pretty to look at! I love it and families wouldn’t have to fight over a casserole dish because everyone gets I assume their own skillet of lasagna like a birthday that’s really cool

My mother was a tailor and expertly repaired clothes and made some clothes as well as cooked a lot of Italian food including American lasagna, so i thiink she would have enjoyed this recipe!

I do handkerchief pasta often. I like to make a simple pan sauce and put the cooked pasta in, and fold the other ingredients into little packets of goodness.
Molto bene.

This looks good but a poor name for it, handkerchief lasagna sounds like something you are going to blow your nose in, fabric lasagna would have been a much better name

The name handkerchief lasagna reminded me of how I wanted to make a giant burrito out of a tablecloth when I was a kid. As an adult, your recipe looks much more appetizing.

As always, Chef John, a mouth-watering delight to watch and listen to your instructional vids. I am, however, curious how dollop translates into international languages!

How many times have I thought to my self, how lucky am I to have found you, Chef John! Today is no different! What a gorgeous recipe! I can’t wait to try it!

Chef John, it has been way too long since I've made one of your recipes. This looks fabulous! I love the idea of homemade pasta! Can't wait to try it. Thanks

Forbidden Chef Secrets book teaches real techniques. I’ve been using a few tricks from the book lately and the difference in my food is insane.

This is such a beautiful dish, can’t wait to try it. But I have to say, with all that cheese it would be criminal to make it without a meat sauce.

Your lasagna soup is awesome. I haven’t made regular lasagna since you published that recipe. Now I have to give this one a try.

As someone who is no longer able to enjoy wheat in any quantity without risking a massive allergic reaction: this is my death row meal.
