Raspberry Mousse
18 oz (510g) raspberries, fresh or frozen
cup (135g) sugar
1 tbsp (15ml) lemon juice
1 tbsp (10g) gelatin powder
cup (60ml) water
1 cup (400g) whipping cream, 35% fat, chilled
Chocolate Glaze
